Slow-Cooker Chicken Tortilla Soup

This was so easy and so good! I used El Pato enchilada sauce and the only thing I changed was I substituted turkey and turkey stock because that's what I had. Will totally make this again!

Chicken Pot Pie IX

My husband loved this! Rather than discard the water from the boiled chicken and vege's, I used it as the chicken broth required in the recipe. I used puff pastry instead of pie crust for the bottom and top crusts in an 8" glass square dish. I needed to add about 10 minutes cooking time for the pastry to completely cook. This was delish an easy and will definitely make it again

Beef and Brie Sliders

The ingredients sounded a little strange to me, but I made them just as the recipe called for, and they were really good! I made them into full size hamburgers instead of sliders. The burgers came out super moist and my husband loved them too. I'll be making these again.

Corn Dogs

OMG!!!! I made these for lunch and they were delicious! I followed the recipe exactly except that I cut it in half. I like a lot of batter so half of the recipe coated 4 Bun length Oscar Meyer hot dogs. I have a deep fryer (heated to 365), and these came out perfectly and were very fast to make...only took about 20 minutes total (the longest part was waiting for the oil to heat up to 365). I did not coat the dogs in flour or corn starch as other reviewers suggested but I did use a paper towel to dry the dogs first and had no trouble with getting the batter to stick. I will be making these again!

Fig and Lemon Chicken

Really good. I used fresh figs because that is what I had. Could use more salt. Once the chicken was cooked through, I poured the sauce into a saucepan and boiled it down to make thicker. I did not peel the lemons as some people suggested, and it was great. I served the chicken and sauce over rice. Will definitely make again since I have a tree covered in figs!

Greens with Cannellini Beans and Pancetta

My garden has produced an abundance of Swiss chard so I tried this recipe using the chard in place of the kale and beet greens, it was excellent! It was the first dish I made with Swiss chard that my boyfriend actually liked!

Caramel Popcorn

I made this to take to a friend's Academy Awards party and it won rave reviews! The hardest part was figuring out how much uncooked popcorn would make 5 quarts of cooked popcorn (1/2 cup + 2 Tablespoons). I added 1/2 cup of peanuts to the cooked popcorn before pouring the caramel over it and it was fabulous!

Stuffed Pattypan Squash

I had an abundance of pattypan in my garden and a group of friends coming over for dinner, so I thought I would give this a try. One of my friends has a wheat allergy, so I substituted the bread crumbs for cooked jasmin rice. I also added fresh chopped parsley, basil and chives. I saved the sliced off tops and put them back on the squash before baking like little hats. It was delish, easy to make, and a huge hit!

Santa's Favorite Cake

This was delicious! I cheated a bit though. For the cake, I used Betty Crocker white cake mix and Duncan Hinz Red Velvet cake. I prepared them per the box instructions, rather than adding anything too them. Rather than swirl the two different colored cakes together, I baked the whole red velevet mix in one 9" pan for 50 minutes and the whole white cake mix in a separate 9" pan for 50 minutes. after the cakes had cooled, I cut the dome off of the tops and used a piece of dental floss, I cut the cakes, width-wise, into 2 layers so that I had 4 total layers. I made the frosting recipe per the directions but used 1/2 of the peppermint extract as many recommended. This was just the right amount of mint for me. I then frosted the cakes, icing in between each layer and on the outside. When the cake was sliced, it looked like a candy cane on the inside!
