Brunch Omelet Torte

I made two. One with sausage, spinach and Italian cheeses, and the other as written with spinach added. The Italian cheese mix was better in my opinion. Also one was made in a regular spring form plan and the other in a large 10 black spring form. The black one cooked more uniformly. In the end I did have to broil the top on low to puff up the pastry and give a nice brown color so as not to overcook the rest. Enjoyed for my Mother's Day brunch but ate too much!

Big Al's K.C. Bar-B-Q Sauce

By accident I thought this recipe was great with just a 1/2 cp of brown sugar (I couldn't imagine adding all of it), no vinegar, no cinnamon, paprika, salt or pepper. Instead of celery or onion powder cut the onion in 8ths and two small celery stalks into thirds. I also used one fresh clove of garlic quartered instead of dried. If you don't like the chunks it's easy to fish them out. At the end I decided to add 4 generous dashes of the vinegar and it was superb to me. Best barbeque I think I've ever made. I don't think you would need as much sugar in the recipe if you cut down on the vinegar. I prefer to use as little sugar as possible in my diet.

Chef John's Flour Tortillas

First time ever making tortillas. I am living in Ecuador and right now you can't find them in any stores nearby. Now I consider myself fortunate. I never knew they could be so easy to make. I followed the recipe exactly. To flatten mine I put down half of a clean clear plastic food bag on the table; another one over the top of the dough and flattened with a pan. Worked fine for me, although when I get home I will probably buy a press.

The Best Vegetarian Chili in the World

Thanks for the recipe. I will make again. I left out the vegetarian burger crumbles, because I prefer unprocessed ingredients. My 9 & 22 year old sons didn't even notice that it didn't have meat in it, Never tried garbanzo beans in a recipe and liked them. I also left out the corn and used only two big 28 oz cans of whole peeled tomatoes which I pureed. I did find the recipe to be a little salty, but it could have been the type of canned tomatoes I chose. Next time I will salt as needed. One last thing I did different was shred a little bit of carrots and add Turmeric because someone told me that it prevents Alzheimers and I felt this was a good recipe where the spice wouldn't stand out.
