Caramel Shortbread Squares

These are excellent and easy to make. I used an 8X8 pan, so it took about 10 extra minutes for the shortbread to bake. I also chilled the shortbread before putting on the caramel, and chilled the caramel layer thoroughly before putting on the chocolate. I had no trouble with the filling falling off the shortbread.

Favorite Banana Blueberry Quick Bread

Superb banana blueberry bread! I used white whole wheat flour for extra fiber, and added some cinnamon, nutmeg, vanilla and almond extract. I also reduced the sugar a little and replaced half the fat with applesauce. The loaves came out moist, with a nice crunchy crust. The flavor is wonderful!

Pittsburgh Chipped Ham Barbecues

Tastes just like the barbecue sandwiches I had when I was growing up in Pittsburgh! I was delighted to find authentic Isaly's chopped ham in the deli at our local store (in the eastern panhandle of WV, no less!). It just doesn't taste the same with anything else! But the "what to drink" suggestion...Riesling??? Really??? Come on, you can't drink anything but Iron City beer with this! I even put a little in the sauce!

Peanut Butter Banana Muffins

These are awesome! I followed suggestions of others and doubled the amount of banana and peanut butter, added additional flour. I also added some salt (not called for in the recipe), about a teaspoon. This gave them more flavor. I also did NOT put the topping on them...just sprinkled a little white sugar on them for sparkle. These muffins are not sweet...and that's perfect!

Chocolate Syrup

MUCH better than commercial chocolate syrup, and no artificial ingredients like HFCS. It's delicious for chocolate milk or on ice cream. I used half "extra dark" cocoa and half regular, and added a half teaspoon of instant espresso powder.

Peanut Butter Cookies IX

Excellent taste and texture! I used all white whole wheat flour and left out the chocolate chips. I've never made peanut butter cookies with oats in them, but they gave the cookies a nice crunch on top of the chewy texture. This will definitely be my #1 peanut butter cookie recipe!

Angie's Perfect Dinner Rolls

Best dinner rolls I've ever had! I made them with white whole wheat flour and they came out light and fluffy and delicious. They omitted one step in the recipe: be sure to knead the dough for about 10 minutes before the first rising. And you really should prepare the baking dishes BEFORE you form the rolls! :-)

Peanut Butter Pie I

This is a wonderful peanut butter pie recipe. I added just a splash of milk to the peanut butter mixture, since it was very thick and might have been too much for my hand mixer to handle. I also used a store-bought crust, since I was pressed for time, but I'm anxious to try it with the homemade crust. It had a creamy texture (frozen or just chilled) and a robust peanut butter flavor (I used all natural unsweetened peanut butter). This one's a keeper!

Ultimate Maple Snickerdoodles

Excellent! Like many others, I didn't have any maple sugar, and couldn't find it. So I used the cinnamon sugar to roll them in. They turned out delicious! I'm going to find some maple sugar for the next batch!

Blueberry Pie

I used 5 cups of frozen blueberries and kept the sugar the same. It was delicious and set up very nicely (I can't stand a runny pie!). The only thing I'll do differently next time is to add a bit of lemon juice.

Berry Oatmeal Muffins

I used white whole wheat flour, vanilla sugar, and 1/2 cup applesauce (reduced the oil to 1/4 cup. I accidentally forgot to put in any egg at all. But these came out beautifully! Very light and flavorful. I'll make sure I forget the egg the next time I make these.

Oatmeal Soda Bread

Excellent texture and wonderful flavor. I used King Arthur whole wheat white flour. It did take a bit longer to bake than the recipe said (about 50 minutes). Be sure to test it with a toothpick before removing it from the oven.

Irish Cream Chocolate Cheesecake

I was able to cut the calories a bit by using light sour cream and 2 packages of neufchatel (reduced fat) cream cheese, along with a package of regular cream cheese. Served with a dollop of green tinted whipped cream for St. Patrick's Day! I prevented cracking by keeping the cake in the turned-off oven for about an hour after baking, then propping the door open for another hour. I might try a wee bit more Irish Cream the next time.
