Buffalo Chicken Sliders

We made this for the super bowl and loooooooooooooooooooooved it. Since a lot of reviews said there was too much blue cheese, I cut the amount in half to one cup. I also increased the amount of buffalo wing sauce to about one cup. Otherwise, I followed the directions exactly (I may have sprinkled a little black pepper over the tray before putting it into the oven). It was great and easy. The most time consuming thing was de-boning the rotisserie chicken and chopping the celery and carrots. There was no need to add extra sauce buffalo sauce, blue cheese or add blue cheese dressing at the end. I used Hawaiian rolls and toasted them in the oven for a few minutes. It was amazing.

Easy Chicken and Corn Chowder

This is wonderful. Like another reviewer, I put everything (even the stick of butter) in the slow cooker. I added a lot of seasoning salt, hot sauce, and black pepper to my liking, but otherwise, I followed the recipe to the T. Every time I eat some, I have to have seconds. I've told so many people about the recipe. I will definitely make this again and again.

Slow Cooker Enchiladas

This recipe is great. My extremely picky sister asked for seconds, and took a lot home. I used chicken breasts, sauteed first, then shredded/cubed, and followed the rest of the directions. I forgot to quarter the corn tortillas -- I just laid four down for each layer. I also bought some low-fat jalapeno cheese and shreded it and used two cups of that plus two cups of Mexican shredded cheese. It was very spicy, so next time, I'll use 1 cup to three. I did everything else as stated, and it came out great. My husband didn't like the look of it once we dug into it, but the tast was great. The tortillas remained sturdy like real enchiladas. I highly recommend.

Smashed Cauliflower

It's ok. I've made it twice -- followed reviewers advice the second time, and it still tastes like runny cauliflower with cheese. It doesn't taste good. Just not what I was expecting.

Best Ever Banana Bread
