Spinach and Orzo Salad

Fabulous! Made exactly as the recipe stated, took to a cookout and everyone asked me for the recipe. Made the day before to let the flavors blend - definitely better the 2nd (and 3rd) day.

Tomato-Topped Sole

Fabulous! Simple preparation with a wonderful result. I did use flounder (it was on sale) and we are fans of garlic, so I added two chopped cloves with the onion instead of garlic salt. May try with tilapia too. Thanks for the great recipe!

Balsamic Baked Tilapia

Really delicious! Followed the recipe almost exactly, just did a half red pepper and a half yellow pepper. Only thing I left out was the cheese because I didn't have any. It was great without it, but I'm sure it'd be even better with the blue cheese. Will definitely make again.

Marie's Easy Slow Cooker Pot Roast

Been making this for awhile now, it's incredibly good. I coat in montreal steak seasoning before browning, deglaze pan with red wine, add all that to the crock pot along with a couple extra of sliced onions (we love onions). I leave the potatoes out and make mashed separately. Shred up the leftovers, add some low-sodium beef broth and frozen mixed veggies for a delicious soup!

This was outstanding. Simple preparation, wonderful taste. Didn't have fresh parsley so I used dried. Try this recipe, you won't regret it. Yummmm!

French Onion Soup Gratinee

Fabulous! I hate to rate a recipe I've changed, but the only changes I made were using herbs de provence instead of the fresh herbs, and white wine instead of red - those were what I had on hand. I also added swiss cheese with the mozzarella on top. It was delicious, and hubby gobbled up 3 bowls.

Russell's Fish Stew

I've been making this soup for a few winters now and it's really great, wonderful blend of flavors. It bugs me when people review a recipe but make tons of changes; that being said the ONLY thing I changed was instead of adding red pepper flakes, I used Old Bay Seasoning instead. (I live just a few miles from the Chesapeake Bay, so we have to add Old Bay to anything seafood!) I simmered it for more like 2 hours so the flavors really blended. Delicious!

Creamy Potato Pork Chop Bake

I initially found this recipe when looking for ideas to use up leftover pulled pork roast. I followed the recipe almost exactly, except I used cream of mushroom (what I had in the pantry) and about 1.5 cups of shredded pork instead of the chops. And since my hash browns were not thawed I actually browned them in a skillet with a little garlic powder before mixing everything together. Used all other ingredients as listed, but decreased baking time since it was all already cooked. My husband raved about this! I thought the fried onions gave it almost an odd sweet flavor, but still thought it was good. My picky daughter ate it, though my picky son did not like it (but he doesn't like anything).

Rosemary Red Potatoes

Really yummy! Unfortunately I didn't have any onions so had to use dried minced onions; I'm sure it would've been great with fresh. I also happened to have some fresh rosemary and used that, delicious - smelled so good in the whole house!

Lasagna Alfredo

Delicious! I took some other reviewers' advice and made a few modifications: I layered it like traditional lasagna; used a bit less spinach, and added a can of drained chopped artichokes. The family loved it, and the leftovers the next day were even better!

Creamy Dill Cucumber Toasties

DELICIOUS and a big hit at the cocktail party I took it to! As other reviewers did, I added fresh dill to the cream cheese mix, used less of the salad dressing mix, spread on cocktail pumpernickle, and arranged them in rows on a platter, with every other row adding diced red peppers, and garnished with a sprig of fresh dill. Beautiful presentation and it looked so gourmet for as easy at it was to prepare! I'd planned on having cucumber sandwiches with the leftovers the next day, but my hubby ate it all up that night when we got home!

Fresh Spinach Salad

Outstanding, easy-to-make salad that got rave reviews from everyone at Easter dinner! Makes a ton of dressing, but it's nice to have leftovers to use on a garden salad. Used a red onion in the dressing and added a few thin onion slices to the salad, and it was delicious.

Classic Chicken and Rice Soup

DELICIOUS and easy meal! My husband usually has three bowls full, and even my picky toddler and 6 year old will eat it. Definitely follow the "Fast Chicken Soup Base" recipe and use that, makes it so much more flavorful than plain old canned broth. In addition to parsley I use thyme, and depending on what's in my pantry/fridge I replace the white rice with wild rice or fine egg noodles, add parsnips and celery, eliminate the peas (not a fan). And I simmer it much longer than the 10-20 minutes recommended, more like 2 hours. Serve with a salad and nice crusty bread or rolls, and you have yourself a super meal!!!!

Fast Chicken Soup Base

Delicious soup base! I add onions, carrots and a few spices when simmering, and simmer it at least twice as long as the recipe recommends. And I don't bother sauteeing the carrots and onions before adding the strained broth back into the pot. (I usually add celery and parsnips as well.) A rotisserie chicken carcass is such a flavorful way to make this broth! I get three meals out of one chicken -- traditional chicken dinner, use some of the chicken in stir fry, and then make the soup. After making this base, I loosely follow the "Classic Chicken and Rice Soup" recipe on allrecipes.
