Downeast Maine Pumpkin Bread

Very good! Made exactly as written, however I used two larger (10 in) loaf pans (it's all I had). I had to add twenty minutes to the baking time, but they turned out great!

Spiced Pot Roast

Great recipe!! Tasted just as I remember them. I did add a little vanilla, and I only needed 1 T of cinnamon for a double recipe.

Best Easy Chicken Croquettes

Very good - reminded me of my childhood! Followed the recipe exactly EXCEPT that I used turkey instead of chicken (leftover from Thanksgiving). In my opinion, you should double the recipe for the croquettes, but don't double the recipe for the sauce. As the recipe reads, it makes way too much sauce (in my opinion.)

Cream of Fresh Asparagus Soup II

Followed recipe, EXCEPT pulled out the asparagus tips before pureeing (personal preference) and put them back into the finished soup later. Wonderful - my husband and I both loved it! Will definately make this again. Thanks!

Mini Pumpkin Muffins with Orange Drizzle

Wonderful! The only changes I made were: 1) I used light brown sugar instead of dark (that's what I had on hand), and 2) the glaze/drizzle seemed a little to runny to me the first time I made them, so the next time I made them I just added a little orange juice at a time until it reached a good consistancy. Thanks for the great recipe!

New York Cheesecake

I don't even LIKE cheesecake and this is great! I made this first for my husband's birthday - it was a huge hit. I just made it again yesterday and, again, everyone loved it. Three things, in particular, that I read in the reviews by others that I think were very helpful: 1) Use a water bath. 2) Instead of wrapping the pan with foil for the water bath, put it in an oven bag. What a great idea! I had absolutely NO problems with the water from the bath seeping into the pan. 3) I used the following recipe for the crust from an earlier review, and it has a really wonderful flavor: 1 1/2 cups graham cracker crumbs, 1/2 cup white sugar, 1/4 cup finely chopped walnuts, 1/4 cup melted butter, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg. I baked the crust first in the oven for 8 minutes, just to prevent it from getting soggy. Also, I let the ingredients get to room temperature first. This isn't difficult to make, just time consuming (with leaving it in the oven for 6 hours after baking, etc.) But both of my cakes turned out perfectly, with no cracks.

Slow-Cooker Chicken Tortilla Soup

We loved this soup! I followed the recipe with these exceptions: instead of using water, I just added more chicken broth. So I used 1 carton of broth (32 oz.) instead of 1 can of broth and 2 cups of water. Also, I only had a 28 oz. can of whole peeled tomatoes, so I just threw in the whole thing. AND I had accidentally opened a can of crushed tomatoes at first, so I also threw in about half of that (14 oz.). (I thought it was a LITTLE too thin before the crushed tomatoes and I think they did the trick.) Also added 2 cans of black beans. I did make the corn tortilla strips - YUM! Worth the trouble, IMO. And really, they were so easy to make! Here's the secret - use a pizza cutter to cut the strips - I cut the tortilla in half first, and then just zipped through cutting the strips - the pizza cutter made it EASY, EASY, EASY!!! (Also, I lightly salted the strips before baking with Kosher salt.) I did cook brown rice as some suggested and added a scoop of cooked rice to each bowl, pouring the soup over the rice. Finally, I served it with the following toppings: sour cream, sliced avocado, shredded cheese, and of course the tortilla strips. I will definately make this again!

Giant Chocolate Chip Cookie

A great cookie, although as others have said it's the Toll House recipe exactly. I didn't incluse the nuts, and used the mini chocolate chips (Hershey's) instead of the regular-sized ones. Made it for my husband for Father's Day. Also, as mentioned by other reviewers, make sure to leave some room around the edges when spreading the dough into the pan because the cookie will spread and needs somewhere to go (otherwise it may run up and over the sides of the pizza tray/pan.)
