Broiled Lobster Tails

These were fantastic! Bought the $5 lobster tails from Albertsons. Had to cook just a little longer than on recipe. Bathed in a salt brine for one hour first and used a little Old Bay.

Garlic Roasted Chicken and Potatoes

This was fantastic! My supplies on hand were a little different so I had to alter it somewhat. I didn't have whole garlic so I used two TBSP of minced added after the butter melted but before veggies added. I used red potatoes, lengthwise sliced baby carrots, fresh portabella mushrooms and 1/4 white cooking wine. I also had just bought a season mix and this was the perfect opportunity to use it. It is McCormick Gormet Herbes de Provence Roasted Chicken & Potatoes. I bought it in the store where they have all the gravy mix/ taco seasonings, etc. It is in a 1.25oz package. I only used 1/2 package since it seamed like plenty of season and it was perfect. I cooked it as stated in the recipe and everything was cooked to perfection!

Delicious Raspberry Oatmeal Cookie Bars

One of our favorites! I use my own raspberry jam from the garden and these are fantastic! I also like to make them in mini muffin tins. They come out perfect!

Sweet Bacon Crackers

I love making "different" desserts and this has to be one of the best ones yet! Very easy to make! I did cover the pan with foil but I found that after it cooled a tiny bit that the crackers were wanting to stick to the foil. Luckily I got them all off before they had permanent foil bottoms :o) Next time I will use parchament paper or spray the foil. Also, 45 mins on 250 was perfect but I did use the last 2 minutes to broil on low. These taste better cold and are fantastic the next day (tastes like candy)!!

Tater-Dipped Eggplant

This was out of this world! My hubby loves eggplant but I've never had it. I grew it this year in the garden and was ready to try it. I have the white eggplant. I used 2 small/med sized and it made about 12 slices. I used garlic flavored potato and added a small heap of marinara then a mozzarella/parm mix to the tops for the last 5 minutes. Will be making this until all the eggplant is gone! ps...hubby and I ate it ALL!

Chicken Delicious

This was so simple to make! The flavor is fantastic buy mild enough (with the sherry) for the kids to enjoy! Will definately be making this again, and again, and again! Oh, we did add mushrooms to the top of the pile at the beginning and stirred them in hours later and they were great!

Raspberry Sour Cream Pie

My hubby accidentally left out an entire freezer bag of our last summer's raspberries. I had to find something to use them for. I did change the nuts to 50/50 macadamias and cashews. I'm just not big on pecans and walnuts on pies. My family loves this pie! My kids ate it for breakfast (2nd pie on day 3) and said it taste just as good. One of my boys opted to heat it up, saying he liked it better warm. I am adding a photo here of the whole pie minus one piece to show that you CAN make two pies from the ingredients. The pie crusts are deep dish and I think they were filled enough! The only thing I suggest is not taking the pie crust from the freezer until you are ready to fill them. I took one out, thinking I could make everything quickly and fill the pie crust, but my crust was defrosted before I could fill them. I realized I would have enough for two pies, so I also used a frozen crust from the freezer. The defrosted one cooked a little darker and had more of an overcooked taste to the rim. Family is already telling me we will make this again!
