Basmati Rice

Grilled Shrimp Caprese

After reading through the recipe, it seemed like an awful lot of pasta so I increased the amount of sauce and used 1 3/4 lb shrimp. I also grilled the tomatoes as well and added torn basil to the pasta and sauce mix. I sprinkled the mozzarella on each serving and as it was still hot, the cheese melted into the pasta nicely. I also grilled the tomatoes and shrimp last. Next time, I will marinate 2 lb. shrimp, grill 2 lb. Roma tomatoes and use 3/4 box of pasta. Even my husband liked it, which is rare.

Szechwan Shrimp

This was great- fast and easy. I doubled the sauce and added cilantro. Next time I will add stir fry veggies and at least triple the sauce.

Chicken with Bouillon

There was nice browning in the bottom of the pan so I made a gravy to go with the chicken. Next time I will use the bouillon granules as the cubes are way too salty and I will add mushrooms to make a mushroom gravy. Really good and simple.

Grilled Chicken Breasts with Zesty Peanut Sauce

I followed the recipe exactly but the sauce was very thick and rich. Too rich for me. I was thinking it would be more like Thai peanut sauce and more spicy.

Chicken Delicious

good but not enough taste so I added some dill, 1/4 cup more sherry, chopped garlic, 1/8 cup capers, and some rosemary. the herbs gave it a richer taste and the capers gave it a twang. I cooked egg noodles and ladeled chicken and sauce over noodles. Made a great dinner and will be a remake with my additions.
