Chewy Chocolate Chip Oatmeal Cookies

Best cookie probably EVER! Made according to recipe, wonderful. On subsequent efforts made minor modifications - 1/2 butter and 1/2 Crisco shortenning (less spread) and doubled chocolate chips. Coworker calls them crack cookies, because eating one makes you want to keep eating them until they're gone and go looking for more.

Alaska Salmon Bake with Pecan Crunch Coating

Quick, easy, tasty, impressive & healthy! Used feedback from others - used prepared honey mustard, added some garlic, used panko breadcrumbs to reduce breadiness and increased pecans for crunch. "Marinated" salmon in dressing prior to adding panko/pecans. Baked according to directions and it came out perfect. Served with brown rice and steamed veges - left enough calories for dessert! YUM!

Pumpkin Cream Cheese Muffins

needed more flavor - added cinnamon & allspice, but still needed more. easy recipe that went over well, but putzy to prepare (batter up sides, cream cheese in middle, batter on top, etc.). i will make them again with added spice and time on hands.

Man Pleasin' Jambalaya

5 stars as prepared using comments from others! This is a great weeknight shortcut version of the much more time-consuming jambalaya. Based on others comments: used andoille sausage, skipped carrots and mushrooms, substituted poblano for green bell pepper, reduced broth, added diced canned tomatoes with juice, added lots of garlic and cajun seasoning to taste. We also added frozen shrimp near the end and let the mixture simmer a little longer. BIG HIT serving a weekend special for company dish on a weeknight!

Boilermaker Tailgate Chili

The family is amazed by rich, hearty, spicy chili skills! Extended members are now requesting recipe based on immediate family reviews. Used 4 slices bacon cooked in dutch oven instead of bits. Substitued 2 lbs cubed top sirloin browned in bacon grease. Used spicy ground sausage, but will use sweet next time. Added a can of chipotle chiles in sauce. Used 1 can black beans, 2 cans chili beans and 1 can southwest beans. Used canned fireroasted diced tomatoes. Used poblano peppers instead of green. Used brown sugar instead of white.

Red Potato Bites

Hit of the party! Only reason not 5 stars is the amount of putzy time required to put it all together and keep the skins on the potatoes while handling. Also cut the tip off the bottom of each to keep them from tipping. Brushed the skins with olive oil and sprinkled with sea salt to keep skins crispy. Skipped the bacon and season salt. Substituted parmesan for cheddar cheese. Substituted fresh rosemary for chives. Reduced sour cream by half and added 2 oz of cream cheese and 1 oz cream. These kept well in the oven when guests arrived late. They also reheated well as leftovers. Next time I will make extra to freeze for future use.

The Best Banana Bread

Easy and wonderful! Moist without being gooey. I made changes as suggested by others - used butter, 1/2 white & 1/2 brown sugar, added vanilla, out of cinnamon so used nutmeg, 2 very soft and 2 soft bananas then baked for suggested time in lower 1/3 of oven to line top of pan with middle of oven. My newlywed husband now thinks I'm a genius in the kitchen. Can't wait for bananas to brown again to try with added ingredients - next chocolate chunks and walnuts.

Second time used lemon-flavored vodka instead of the lemon, diet cranberry and diet ginger ale. Reduced the carbs enough for my diabetic friend to also enjoy.
