Mom's Yummy Onion Casserole

Great way to treat onions as a vegetable! instead of an accent. I used cream of celery instead of cream of Mushrooms, because it is what I had. Used a mixture of French fried onions and Ruffles Sour Cream and Chives Potatoe chips. Used 5 VERY large onions and made in a 7 x 12 inch Cassarole dish. Sauted the onions in two batches. Looking forward to making this dish again. Would love to take it to a Pot Luck. Ate it as a side dish with Steak, also cold the next morning and warmed up the next evening.

Floret Salad

VERY, VERY GOOD. Have made it three times now. Once without the cashews, once without the onion. And I have made it with yellow onion. All very good. This last time I used "Sun Crystals" instead of sugar, used 5 packets for 4 servings would only use 4 next time. I have used rice vinegar, part Miracle Whip and part plain yogurt for the sauce. This last time I used pre-cooked bacon to make it easier. It will be on my rotation every time I buy Broccoli and Cauliflower.

Grilled Peanut Butter and Jelly Sandwich

We have been doing this for years, in the pancake side of a griddle (squashed flat). Only instead of jelly we put in chocolate chips, and sometimes marshmallow fluff. Yum, Yum.

Celery Salad

I am looking for more ways to fit fruits and vegetables into my diet and this fits. Served it with Fish and sweet potatoes fries for lunch today. My husband even said it was something he would enjoy taking in his snack lunches. Used dried cranberries. Thanks for sharing.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

I tried this with 8 eggs 4 regular and 4 eggland best. Only 1 of the eggs came out a little green the rest were perfect. Wish there were directions for 4 or 12 eggs.

Sugar-Free Peanut Butter Cookies

I almost made the mistake of assuming my 16oz jar of Peanut Butter was 2 cups (when I measured I found it was about 1/4 cup short and a little Jiff to the natural Peanut butter that I started with. I wanted to make 24 cookies, So I patted all the dough on Parchment paper and made it into a rectangle, and then cut it into 24 squares (like prep made cookie dough) I was able to then roll the cookies by hand and make marks in them with the tins of a fork. They looked great, however I wasn't wild about the taste - somewhat Dry in the mouth.

Pineapple Ham and Rice
