Pumpkin Muffins II

These are so yummy! I made the recipe healthier by using unsweetened applesauce for the oil, egg substitute for the eggs, 1 cup of oats and 2 cups of whole wheat flour for the all-purpose flour and 1 cup of brown sugar for the 2 cups of white sugar. I made some into muffins and also poured some of the batter into mini-loaves. Even my 4-year old loves them. This is a yummy and very healthy snack!!

Slow Cooker Chili

I really wish I would have read the other reviews prior to making this. The recipe 'as is' does not make a very good chili. It is very runny, not enough chili powder and has WAY too many beans in it. I think the changes suggested by the other reviewers would help a lot.

Chocolate Brittle Surprise

YUMMY! I made several different types of candy (including another toffee) and this one was by far the favorite!! Very easy to make in comparison to other toffees and very tasty. Used Saltine's and it turned out wonderful. Will make these every year.

Hard Rock Candy

Wow! This turned out VERY cinnamonny. I had a very hard time finding cinnamon oil and eventually found it at my local pharmacy. Becuase it is so powerful, they keep it behind the counter. I'm guessing that the type I used was very strong. I'll only use half the amount of oil next time. Very easy to make, however. We also rolled and cut some of our's once it was cool enough to handle and it looked very pretty.

Slow Cooker Chicken and Dumplings

I've made this twice, the first time I made it I tried to 'cheat' by cooking on low for a longer period of time, which did not turn out well at all. However, the second time I cooked it on high for 5 hours and it turned out great! I did find, however, that 2 packages of bicsuits is too much. If you have a round slow cooker, you are lucky if you can fit in one package, however with an oval slow cooker you can fit 1.5 packages.

Grandma's Slow Cooker Vegetarian Chili

I LOVED this chili. I used regular black beans becuase I couldn't find the soup and it was still great. My husband and father both liked it, but would have "preferred" to have some meat in it. I thought the flavor was wonderful though. Even better warmed up the next day!!

Chicken Enchiladas I

Wow! These were great. I used D's Famous Salsa recipe from this site instead of taco sauce and it they were wonderful. I made half the recipe for my family of 3 and we had extra for lunch the next day. I also had some extra filling, which was so yummy that I decided to serve it with chips. This is definately a recipe that I will make for company, very nice presentation.

Roasted Vegetables

I thought this recipe was OK. I definately took me longer than the estimated 15 minutes to wash, peel and cut all of the vegetables. I will make it again, but I think I will leave out the potatoes and add zucchini and mushrooms.

Braised Balsamic Chicken

This is an easy recipe that makes a great dinner. I've made it twice and the second time I cut the vinegar in half and like it much better. My husband doesn't normally like 'tomatoey' recipes, but really likes this one. I serve it over white rice.

Sausage Egg Casserole

I've made this recipe twice now for brunch and it has turned out wonderful both times. Making it the night before really saves time the morning of the brunch and it was so nice to just be able to throw it in the oven and let it cook. Everyone I've served it to (including my 3 year old), love it.

Divine Meatloaf

This was a great recipe! Both my 3 year and my husband loved. Both are picky about veggies and they didn't even mention that there were vegetables in it. The sauce on the top was great. I'll definately make again.

Apple Delight

I wish I would have read the other review prior to making this one. You MUST mix the butter into the cake mix prior to baking for it to turn out right. I didn't do this and ended up having to stir the entire thing up after cooking for 30 minutes. Once I stirred it up and baked it 15 more minutes, it tasted great.

I agree with many of the other reviewers that this is a great recipe, but the sour cream was overwhelming. I made it for company and it didn't look very 'pretty' to serve. Everyone liked the taste though.
