Pizza Casserole

4.5 stars as written, 5 stars with my own modifications. I used 1/2 lb. Italian sausage instead of hamburger and added in lots of dried basil (wishing I'd had fresh!). I also subbed ziti for egg noodles, since it holds up better to heavy dishes. I used 1 lb. ziti pasta. Next time, I will add mushrooms and black olives, too!

Sweet and Nutty Moroccan Couscous

Chipotle Shrimp Tacos

Delicious as is, phenomenal when served with sour cream and Mexican cheese on flour tortillas instead of corn! The fresh lime is a must, we served them with extra lime wedges, too.

Cinnamon Griddle Cakes

I substituted honey for the corn syrup and added a dash of maple extract. The pancakes tasted great, but the extra-thick batter had a tendency to burn before getting done in the middle. Will make again, but experiment with changes to the recipe to prevent scorching.

Easy Mint Chocolate Chip Ice Cream

We used Baker's semi-sweet chocolate squares in place of chips, and replaced the milk and cream with all half&half, but otherwise we followed the recipe exactly. The ice cream was amazing - creamy and just perfect. We couldn't wait for it to freeze completely and ate it while it was the consistency of soft serve. We will definitely make this again!

Garlic Dill New Potatoes

In this dish, simple flavors are best! I boiled my potatoes in salted water to speed the process, but added the garlic and dill as described in the recipe. No fancy frills needed - the potatoes were great!

Sweet Spicy Wings

My husband and I loved these wings! I added some chipotle hot sauce to the regular kind to give it an added smokiness. We also baked our wings, since the weather didn't allow for grilling, but we didn't mind - they were demolished. Thanks for a great recipe!

Tomato Basil Towers

LOVED IT! I subbed fresh mozzarella for the gorgonzola cheese, since I prefer a lighter cheese. Used lots of basil and balsamic, too. It was gorgeous and refreshing. I will make this again.

Absolute Mexican Cornbread

E-Z Drop Biscuits

Wonderfully tender, slightly sweet and simple biscuits. I doubled the sugar since we like our biscuits a little sweeter and used whole wheat flour, but those were my only modifications. We loved them. Thanks so much for this recipe. It's a keeper!

Plum Blueberry Upside Down Cake

This is a nice cake with a lovely presentation. I had four large too-tart black plums, and I wanted to use them up before they went bad. It was a success - the sweet cake balanced the plums nicely. It seemed to lack something, however, but I am not sure what it is. The only changes I made were to use only plums and whole wheat flour and butter instead of regular white flour and margarine. Maybe it needs more of the topping? I will try that next time and update my rating if it improves.

Peach Cobbler I

WOW! I love this cobbler! It has become my new standard, with VERY few adjustments. I feel as though it needs more peaches, so I will increase them next time. Also, I added extra cinnamon (our preference), and I sprinkled 2TSP lemon juice over the peaches before adding them to the baking dish, to help the fruit retain its color. The only other change I made was to use whole wheat flour instead of regular bleached flour. It gave the cobbler a wonderful, homestyle flavor. Make sure to use real butter, as specified, for best results. And THANK YOU, V. Monte, for an amazing recipe!

Non-Alcoholic Margarita Punch

Instead of making this a blender punch, I froze the limeade and lemonade concentrates, egg whites, sugar, and ice mixture in a pretty bundt pan lined with cling wrap and added thinly sliced lemon and lime slices throughout. It made a lovely floating ring and we poured the Sprite around it. The punch was a huge hit.

Fabulous Foolproof Lasagna

Make sure you completely cover the noodles with sauce before baking to will keep them from getting crunchy. And, I often use more sauce than the recipe calls for. It just depends on your own taste.
