Stupid Simple Roast Chicken
A perfect roasted chicken. With mashed potatoes a very easy weeknight meal. Roasted it with carrots and celery as someone suggested and it added a nice flavor to gravy, as well as provided a vegetable for dinner!

Garlic-Lemon Double Stuffed Chicken
I was devestated with company coming in 1/2 hour to realize I had accidently bought boned chicken thighs. So- when life gives you lemons.....They were a hit! My guests like dark meat, I don't, but they had a wonderful flavor. Couldn't roll them so just spread cream cheese on one thgh, layed the cheddar on top and covered with the other thigh. Sprinkled with bread crumbs and parmesan and poured butter mixture over the top. They took a bit longer to cook, but were moist and delicious! Served with roasted red potatos and a spring mix salad with red onion and a garlic-lemon vinagarette.

Addictive Sweet Potato Burritos
My vegetation and non vegetarians daughters LOVED these! Great to freeze. I think some of the reviewers were mistaking Yams for sweet potatoes. You really need to use sweet potatoes and kidney beans. If you want to use black beans, as someone said they did,then yams would be better
