Sean's Falafel and Cucumber Sauce
The cucumber sauce is called tsatsiki in greek restaurants. To keep it from being watery put the cucumbers into a cheese cloth or bowl that drains for a couple hours. Lightly salt the cumbers to pull out the extra water. We put garlic in the tsatsiki.

Vegetarian Chickpea Sandwich Filling
If you like this also try hummus. I am from California so I use hummus and would use this in a tortilla. It is faster than heating up frijoles since it tastes good cold. With some cheese in the tortilla you can have a really good and tasty breakfast.

Stuffed Cabbage Rolls
Similar to the way my mom made but she used tomato paste instead of soup. Also, she steamed the cabbage leaves over a pot of boiling water and removed them one by one as she stuffed and wrapped the cabbage. I believe this is the old Russian way since she was an old Russian.
