Buffalo Chicken Dip

Mmmm this was good. I used two boiled chicken breasts, about 1 cup blue cheese, 1 8oz container of cream cheese and almost the whole bottle of franks hot sauce. I put mozzarella cheese on top and backed until the top was browned. If u add 2 8 oz containers of cream cheese then i would add an extra chicken breast because i think it would be floating in cream cheese but thats just my opinion. I served with fritos. My husband and i enjoyed this very much.

Key Lime Pie VII

Im not sure how key lime pie is supposed to taste like but it tasted great to me. Kinda strong at first. I used two cans of sweetened condensed milk and 20 squeezed keylime filtered through a screen filter. I did notice one thing, that i kinda has a little grainy texture.Like little mini pieces of sand or something. Not all over but i dont know if that is supposed to happen or not. Overall great pie.

Jimmy's Mexican Pizza

This is pretty good. I used morning star crumbles because i don't eat ground beef. I used 8 in torillas and didn't use green onion cause i didn't have any. Tastes similar to taco bell. I will be making this again.

Coconut Poke Cake

I really love this cake. Coconut cream can be found in the hispanic or alcohol sections of stores. I tried the fork method but most of the liquid was absorbed around the sides. I think i will try something another reviewer did and use an end of a wooden spoon to make bigger holes. I followed the recipe exactly as written and its a 5 star to me and my husband. Next time i am going to add pineapple to the batter and some strawberries on top with the coco.

Mound Bars

These are great! I still used a 9 by 13 pan. I omitted the sugar from the crust. I doubled the coconut and the condensed milk. The first time i made this i double the coconut but not the milk but some parts didn't hold too well. So now i used one can of sweetened and one can unsweetened. Like others suggest, its so much easier to just drizzle the milk over the coconut. I put the semisweet chips on top and popped it back into the oven for a couple minutes and spread it over the coconut. I topped with shaved almonds. My husbands co workers rave over this recipe. It's sweet but not too sweet.

Black Bean and Corn Quesadillas

The great thing about quesadillas is that you can fill them with so many different ingredients. I omitted the brown sugar and the pepper flakes. I put about a table spoon of Cayenne chili pepper and a table spoon of cumin. Like others suggest putting the ingredients on one tortilla and folding over is better. I put cheese on both sides. I added a cup of salsa and simmered until liquid left. I served with homemade guacamole, sour cream and homemade chili verde and rojo.

Fabulous Wet Burritos

I want to start by saying that if you are Hispanic or used to authentic burritos this is not the recipe for you. My friend printed this recipe and made it. My husband is Mexican and so is her boyfriend. None of us cared for this recipe.

The Big Easy Jambalaya

I had all the ingredients on hand except the rice mix. I used 1 red, 1 yellow, 1 green bell pepper. 1 medium large onion, 1 pound small shrimp, 1 lb beef sausage ( the U shaped one). I sauteed all the veggies with 3 cloves of minced garlic. I sauteed the sausage and shrimp in a separate pan with red pepper flakes, black pepper and creole seasoning. The meat has better flavor that way i think. ( i also use chicken and ham on different occasions) I don't use water. Normally beef or chicken broth. I pour some wine in or beer. I also had about half cup or more of rice and adjust the fluids or add more when needed. I put red pepper flakes and black beans with the rice. At the end i mix in the meat.

Tofu Tacos I

I gave it 5 because i used the review of someone else. I tried tofu tacos w/ firm tofu before and hated it. One review said to press it, freeze it and then press again. That's what i did. I pressed all night then froze until i was ready to use. Pressed again for about on hour. It gave it the right texture. I used a packet seasoning this time and squeezed a lime on there. I dont think it needs tomato sauce cooked with it. I served it the first day with tacos and the next day with tostadas. My husband ate all the tacos not realizing it wasn't carne :)))

Watergate Salad

Only a five star with changes of course. I LOVE this salad and bring back a lot of memories. Like others have said. Drain the fruits that you choose to put in. I used one box of pudding mix, a whole 8oz container of cream, 1 cup chopped walnuts, maybe about 2 cups of marshmallows, 20 can drained pineapple, half cup of coconut and a can of drained mandarins. This is sooo perfect and everyone loves it.

Slow-Cooker Posole

I have made this several times and haven't commented yet. I have played around with it. I always use chicken because we don't pork that often. Chopped onion works better then slices and i use chicken broth instead of water. I always had a can of green chili and a lot more of the spices. We like it spicy and hot enchilada sauce is mild for our taste. This is a great alternative to making it from scratch if you are in a rush.

Andy's Spicy Green Chile Pork

this is great! I used a 3.83lb pork shoulder bone in. 1 1/4 bottles of Medium La Costena green mexican salsa. I added a large white onion, 3 cloves minced garlic, cup of fresh cilantro, and i used 5 serrano chilis seeds in and 2 jalapenos. My husband and I love spicy food and this HOT. I think that the 2 serranos would be spicy enough for anyone who wants it to be i would 2 and then 2 jalapenos. We rarely eat pork, but this is going into the rotation. I might try it with beef next time.

Easy Guacamole

This recipe was good. My husband is mexican and alot of my friends. Non of them had ever heard of adding cream cheese or sour cream so i didn't. I also only added half a fresh squeezed lime and even that was a bit much. (my lime half had a lot of juice) I used 2 tomatoes because my husband loves them, 2 gloves of garlic, 2 finely chopped jalapenos, 1 small onion and a tiny slice of ginger. The recipe provided is a great starter recipe.

Slow Cooker Roast Beef

MMMMMMMM! this is delicious! I added two cloves of minced garlic a bit more pepper. I used 1 onion soup packet and half cup of soy sauce. Later i added corn starch to thicken it up and make gravy.

Baked Slow Cooker Chicken

I was surprised at how well this turned out. I slept past my alarm so it cooked an extra 4 hours on accident. The breasts were lightly dry but not too bad. I just put it on top of the foil balls because i uses the chicken to make guarrachas for my husband and chicken salad for myself. Then i used the meat in enchiladas. I seasoned it very well with a spice and butter rub under and over the skin. Mine was nice and golden colored.

Easy Cheesy Chicken I

Like others i changed the recipe a bit. I used 4 chicken breasts, 2 cans of a mixture cream of mushroom and cream of chicken, 1can chedder cheese soup, 1 can fiesta nacho, 2 cans of mushrooms around the last hour i added 1 bag broccoli and 1 bag CA veggie mix after i shredded the chicken. ( If you use frozen remember the sauce won't be as cheesy tasting or thick still good though!) I cooked up a bag of egg noodles and added that at the end. I have made it without the noodle and it was very filling. Make sure to season the meat before cooking.
