Easy Garlic-Lemon Scallops

This is pretty close to perfection. It's one of those recipes where all the amounts of the ingredients are completely adjustable to taste. I wanted my sauce full of lemon and garlic, and so added more of those, and once I took out the scallops I added a dollop more butter. Rich, buttery, delicious and took just a few minutes. I served it over angel hair pasta.

No Bake Lime Mousse Torte

This is one of my favorite desserts and it should be noted that it originally comes from Bon Appetit, it's called a lime mousse cake (epicurious.com). I've made it dozens of times and it's absolutely wonderful, restaurant-quality. I add a touch of green food coloring to make it look more lime-y.

Raspberry Fudge Brownies

These could very well be my favorite brownies. Moist, fudgy and the topping is just delightful. And such a pretty dessert, it would be the star of a dessert tray. I left out the mini chips, simply for economy's sake, and used regular chips instead of chocolate squares, just as good. I topped with a slice of raspberry and it was even prettier.

Famous Chicken Francaise

This is such a nice base recipe. I adjusted it to make just one breast, for me, but only cut the broth amount in half and used half a lemon in the broth. Came out perfectly lemony and lovely. The chicken (which I pounded) is moist and tender. I agree with other reviewers there are a ton of things you can do with this to give it a personal spin, but I really liked it as is, found it perfectly flavorful (but again, I used plenty of lemon juice so that was taste was very present). Add capers if you want it to be more like picatta.

Simple Scones

My friends and I do a tea every spring, and I'm in charge of scones, lemon curd and cream. I've used a perfectly nice scone recipe for years but it never makes enough and this year I wanted to make another recipe, too. Wow, this blows the other one out of the water. Tender, moist, a hint of sweetness, just lovely. I didn't freeze my butter - no time - and simply rubbed it into my flour until it resembled crumbs, like I did for my other recipe - which, incidentally, is now history.

Chicken Piccata II

This is a favorite restaurant pick of mine and this recipe is just delicious! I used tenderloins, which worked great, and left out the paprika. I found the bouillon powder to be rather salty, so next time I'd use chicken stock. I added capers. With just a little prep ahead of time this is a meal you can have on the table 30 minutes after you arrive home from work.

Parmesan Spinach Balls

I made these for Christmas Day and they were nothing special - disappointing in fact. Although the addition of mustard as a dipper helped a lot. I make a spinach square recipe that is so much tastier than this.

Chicken Kiev

I gave this recipe 4 stars when in reality it merely gave me a guideline and I took it and ran with it. My butter was from a tub of flavored herb butter I got as a Christmas gift, and I flavored my bread crumbs with seasoned salt. And finally, I took another reviewer's suggestion and merely pan seared in a little oil, to brown and crisp up the crumbs, rather than deep frying, and finished it in the oven. I've never made chicken kiev where the butter didn't completely leak, but cooking it in a small pan and spooning the liquid butter over the finished chicken was pretty darn delicious!

Chicken with Quinoa and Veggies

This is a tasty, easy dish, especially if you're a gardener and can find several of these ingredients in your backyard. I am amused at the addition of garlic "scapes" - after a "what the hell are they?" moment I substituted a garlic clove and moved on. The cheese melts to nothing, so I think I'd either add it later, or omit it completely if I was watching calories. Had a lime on hand so I added the juice, but don't think I would have missed it. As for the quinoa, it was my first time making it, tasty enough but for $5.99 many things, rice, brown rice, even mashed potatoes could have been substituted, I won't hurry to buy another box. A nice, healthy dinner that won't break the bank.

Garden Fresh Tomato Soup

Loved this fresh, easy, flavorful soup. Make it once, as the recipe reads (that's ONE ONION, SLICED by the way) then have at it with the tweaking, so many ways to adjust this. Although I did add garlic the first time. Doesn't make much, really, only 3 meal-sized servings, so either double or make it again. Not much fat, chock full of vitamin C, beautiful color and delicious - hard to miss.
