Tomato Basil Pasta Salad
Make this for your bookclub. Make it for your next picnic. Make it for a potluck. Add feta cheese and grilled chicken and call it dinner. The point is, make it. Very good as is, next time I'll add more marinated artichoke hearts or maybe just cut them bigger, add more basil. This is infinitely tweak able but make it as is the first time, to see where you want to go. Since I grow my own cherry tomatoes and basil, I'm already halfway there in July and August.

Easy Garlic-Lemon Scallops
This is pretty close to perfection. It's one of those recipes where all the amounts of the ingredients are completely adjustable to taste. I wanted my sauce full of lemon and garlic, and so added more of those, and once I took out the scallops I added a dollop more butter. Rich, buttery, delicious and took just a few minutes. I served it over angel hair pasta.

No Bake Lime Mousse Torte
This is one of my favorite desserts and it should be noted that it originally comes from Bon Appetit, it's called a lime mousse cake ( I've made it dozens of times and it's absolutely wonderful, restaurant-quality. I add a touch of green food coloring to make it look more lime-y.
