Sukhothai Pad Thai

Substituted fish oil for soy sauce, used peanut oil, and substituted vinegar with 2 tbsp lime juice. Would probably use less lime and a little more salt. Otherwise turned out pretty well.

Black Pepper Beef and Cabbage Stir Fry

Perfect Baked Jerk Chicken

Very delicious! Love the spices. Pretty much followed the recipe but we checked our chicken about 30 minutes early and it seemed to be done already so be careful about that lest you want burnt or dried up chicken.

Chicken and Apple Curry

Very good and easy recipe! Used 2 chicken breasts but same amount of sauce. Could use a little more chicken though. Cooked everything in skillet: chicken first, set aside, then add onions and apples, then curry powder and liquids, then add chicken back in. Having coconut milk on hand to use instead of regular milk would have added a nice touch. Served with rice, delicious!

Mrs. Sigg's Snickerdoodles

Turned out a nice fluffy texture, but needed a little more flavor. Maybe add more sugar. Reduced yield to 1 dozen. Used 1/2 tsp of white vinegar instead of cream of tar tar. Mixed wet then added dry and baked for exactly 8 minutes.

Eggplant Parmesan II

It turned out pretty tasty. Followed other advice and salted eggplant for about 20 minutes, rinsed in cold water and pat dry. We thought the eggplant would turn out better if you err on the side of thicker slices, maybe 1/2-3/4 inch thick. Also watch the cheese if you bake the dish on the top rack, ours turned out a little brown and crunchy.
