Pesto Chicken Penne Casserole

Made it last night, everyone had seconds and not much left. I have 2 of my kids that are on swim team. They burn off tons of calories a day in practice and a recipe like this refuels them.

Famous Chicken Francaise

Tried this for the first time tonight, rave reviews. I used a little more butter than it called for to cook the chicken in and used boneless, skinless chicken Thighs instead of breasts. They were easier to fry and moister than the breasts. A keeper for sure...

Easy and Elegant Pork Tenderloin

You definitely need to lightly lay some foil over this or it will burn, spray the dish with Pam before putting the tenderloin in the oven and for sure use a meat thermometer. It was good.

Chicken Souiza Cornbread Bake

Overall I give it about a 4.5 for the first time. I recommend baking the corn bread for about 10 minutes before adding the rest of the stuff. Since the recipe did not mention this, mine came out a little mushy and I did not want to risk burning. I put the green chile peppers into the corn bread mix. Overall, lots of good stuff in it, will make it again sometime soon

Cream Cheese Chicken

Made this tonight and it was fantastic, it is replacing some of the lesser chicken recipes I have on file. I flattened the chicken breast, added the cream cheese mixture then rolled them up and pinned them together with toothpicks. I then spread the dijon/brown sugar over the chicken and toppped with the walnuts. Awesome!

African Chicken Stew

As previous posts indicated you look at the ingredients and wonder how this will taste. This was really good. I doubled all the spice requirements and it came out great. I served over brown rice but you could use white no problem. I used the chicken broth instead of water, you may want to add a little more than called for as my got a little dry at the end. But we will add it to the list to make again. My kids are beginning to wonder what strange recipe my Dad will make next, Garbanzo beans and peanut butter?

Buffalo Style Chicken Pizza

My first time to leave a review and this was pretty awesome. Do a search on All Recipe's and make your own crust, very simple. I grabbed Monterey Jack instead of Mozzarella at the store by mistake, hey, they both begin with "M" and it worked out great. I did coat the crust before pre-baking for 4 minutes with italian dressing. This is a definite keeper for a quick thing for the kids bringing friends over or Sunday night. Add about any leftover veggies or meats and some sauce and cheese and you are done, they like making it also.
