Roast Chicken with Rosemary

My husband and I love this recipe. Instead of cutting the onion into quarters, I diced it and also added a clove of minced garlic into the "stuffing". After the chicken was cooked, I tossed the onion, garlic, rosemary mixture with some rice and it was delicious as a side dish! The chicken stays unbelievably moist and the carcass makes a fantastic stock! This is going to be a regular dish.

Pan-Fried Asparagus

Delicious. I have made this many times but with less butter. Also, definitely use coarse salt. It makes all the difference.

Burgundy Pork Tenderloin

Delicious. I had a slightly-less-than 2 lb. roast and cooked it for about an hour. I had to add some flour in addition to the gravy packet to get the gravy to a consistency I liked but it was very flavourful. Served with mashed potatoes and steamed green beans, it was a wonderful meal. I used Merlot but next time I may try a Bordeaux. I will try the slow cooker adaptation at some point, too, but I was really happy with this recipe.

Cajun Spice Mix

This is great and flavorful. Easy to assemble and gives the right amount of kick. I use Cajun spice rarely but I have the ingredients for it on-hand. I will never buy a jar of Cajun spice again.

Pumpkin Pie Spice II

Perfect blend of spices at a fraction of the cost you would pay for it at the supermarket. I always have these spices in my cupboard. I have never bought pumpkin pie since.

Low-Fat Blueberry Bran Muffins

These are fantastic! I am always skeptical when it comes to low fat muffins. They always look good but never turn out that way. Not these! I found them delicious. They also freeze well.

B.L.T. Salad with Basil Mayo Dressing

A delicious, fast and filling recipe for hot summer evenings when you don't feel like cooking. Making your own "croutons" makes the difference. I often use this recipe when I have a lot of basil that I need to use up. It's popular every time I make it.

Italian Wedding Soup I

Delicious! Easy to make! Wonderful~ I followed the advice of others: 1. Make pasta separately (Acini de Pepe instead of orzo) 2. Baked the meatballs at 350 for 25 minutes 3. Used frozen spinach (I had some on hand) I also added some celery as well as some onion, garlic and zucchini that I had sauteed in olive oil. (also other people's suggestions) It was a nice touch but I think I will skip it next time and stick with the original recipe.

Texas Hash

I made this recipe lighter by using ground turkey instead of the beef, brown instant rice instead of white, light tex-mex cheese instead of the slices (personal taste preference) and added a can of pinto beans. It freezes and re-heats well. The portions are generous.

Potato Leek Soup I

What a lovely, mellow, creamy, delicious soup! I cut the recipe in half and it was very easy to make. I used a hand mixer to puree the potatoes, and added the cooked leeks to the original pot of potatoes. Other than that, I followed the directions to the letter. It doesn't need anything added! Perfect cold weather soup.

Bacon and Cheddar Mashed Potatoes

Fantastic! What great comfort food! I didn't have Miracle Whip so I substituted the same amount of margarine and I used 1% milk and we loved the taste. I served it with ribs made in the slow cooker. It was a great meal for a VERY cold winter's night.

Red Bean Salad with Feta and Peppers

Tasty and easy to prepare. The cabbage gives the salad a nice crunch and the feta has the right amount of sharpness. All in all, a very satisfying and light salad that went perfect with our barbecue.

Green Curry Tofu

Really easy and delicious. I used the base of this recipe and used chicken instead of tofu (husband doesn't like tofu). I added broccoli and peas. We *love* spicy dishes so we really enjoyed the 2 tbsp of green curry paste. I plan to look for even more green vegetables and will make this again and again.

One Skillet Pork Supper

Very easy to make. The meat was very tender. It took only 30 minutes before the carrots and potatoes were done. I added some dried oregano. The soup didn't make the dish taste tomato-ey at all. I may try it with different soups.

Chocolate-Cherry-Banana Breakfast Smoothie

This was fantastic. I altered it slightly because I wanted no dairy or soy. I halved the recipe: 1 frozen banana, 1 cup frozen cherries, 1 cup plain Almond Breeze almond milk, 2 tsp cocoa powder. It was delicious.

Bacon Pie

Delicious and very easy to make. It cooked in the time specified and came out very fluffy. It also reheated very well. I plan to try other meats and cheeses in this. I used pancake mix like others suggested and it did the trick.

Tropical Fruit Smoothie

Great. I didn't have papaya so I doubled the strawberries. I used 1/3 cup orange juice and 1/3 cup water instead of ice. Will use frozen fruit next time so that it is a little colder. But it was delicious and very easy.
