Mini Meatloaves

Very good and tasty. Instead of forming them into individual loaves as suggested in the recipe, I used a muffin pan that I sprayed with PAM. The cooking time was the same and it was easier, too.

Italian Wedding Soup I

Delicious! Easy to make! Wonderful~ I followed the advice of others: 1. Make pasta separately (Acini de Pepe instead of orzo) 2. Baked the meatballs at 350 for 25 minutes 3. Used frozen spinach (I had some on hand) I also added some celery as well as some onion, garlic and zucchini that I had sauteed in olive oil. (also other people's suggestions) It was a nice touch but I think I will skip it next time and stick with the original recipe.

Potato Leek Soup I

What a lovely, mellow, creamy, delicious soup! I cut the recipe in half and it was very easy to make. I used a hand mixer to puree the potatoes, and added the cooked leeks to the original pot of potatoes. Other than that, I followed the directions to the letter. It doesn't need anything added! Perfect cold weather soup.

Hearty Lentil Soup II

It was very good and plentiful. I certainly ended up with more than 2-3 servings. Also, the lentils absorbed a lot of the liquid, making it more of a stew than a soup. Next time, I will use only 1/2 cup of lentils to see if that will make it more like soup. All in all, a good, cheap and hearty recipe. Definitely a keeper!

Grilled Chicken with Fresh Mango Salsa

Unusual yet tasty. We really like ginger, so I used a lot of it, which gave it a lot of zing. Complemented the barbecued chicken very well.

Bacon Pie

Delicious and very easy to make. It cooked in the time specified and came out very fluffy. It also reheated very well. I plan to try other meats and cheeses in this. I used pancake mix like others suggested and it did the trick.

This recipe was just okay. There was nothing special about it. It seems to me that it would taste better with dill instead of thyme. I won't use this recipe again.

Steak Salad

Quite delicious. Normally, we don't like blue cheese but its tang was just right in this very easy salad. We don't have a grill so I just cooked the steak on the stovetop. Perfect!

Baked Pumpkin Bread

If you are looking for a good pumpkin bread recipe, this is *not* it. There was no pumpkin taste at all (and I followed the advice of others and added more pumpkin). However, if you are looking for a good spice cake recipe (flavourfull, moist, dense, filling), you will not be disappointed. I wasn't looking for spice cake so I was disappointed with the results.

Green Curry Tofu

Really easy and delicious. I used the base of this recipe and used chicken instead of tofu (husband doesn't like tofu). I added broccoli and peas. We *love* spicy dishes so we really enjoyed the 2 tbsp of green curry paste. I plan to look for even more green vegetables and will make this again and again.

Tropical Fruit Smoothie

Great. I didn't have papaya so I doubled the strawberries. I used 1/3 cup orange juice and 1/3 cup water instead of ice. Will use frozen fruit next time so that it is a little colder. But it was delicious and very easy.

Swiss Cheese Scramble

Very tasty. Takes longer to prepare than indicated in the recipe, though. For instance, I grated the cheese instead of buying it pre-grated. Also, I don't have a pan that can cook a pound of bacon all at once so cooking it in batches makes for a longer preparation time.

Bacon and Cheddar Mashed Potatoes

Fantastic! What great comfort food! I didn't have Miracle Whip so I substituted the same amount of margarine and I used 1% milk and we loved the taste. I served it with ribs made in the slow cooker. It was a great meal for a VERY cold winter's night.

Roast Chicken with Rosemary

My husband and I love this recipe. Instead of cutting the onion into quarters, I diced it and also added a clove of minced garlic into the "stuffing". After the chicken was cooked, I tossed the onion, garlic, rosemary mixture with some rice and it was delicious as a side dish! The chicken stays unbelievably moist and the carcass makes a fantastic stock! This is going to be a regular dish.

Chocolate-Cherry-Banana Breakfast Smoothie

This was fantastic. I altered it slightly because I wanted no dairy or soy. I halved the recipe: 1 frozen banana, 1 cup frozen cherries, 1 cup plain Almond Breeze almond milk, 2 tsp cocoa powder. It was delicious.

Egg and Hash Brown Pie

I didn't have enough hash browns so I used one cup chopped yukon gold potatoes with 2 cups frozen hash browns (which I kept frozen). That worked surprisingly well. I also didn't have green onions so I used chives. Like other reviewers, I also think that this needs something else ... maybe red bell pepper. It reheats nicely so I was able to have a quick breakfast the next morning, too.

Red Bean Salad with Feta and Peppers

Tasty and easy to prepare. The cabbage gives the salad a nice crunch and the feta has the right amount of sharpness. All in all, a very satisfying and light salad that went perfect with our barbecue.

Ranch Dressing II

A very easy and tasty dip. I think it's too thick to be a salad dressing if you use sour cream and mayo. The buttermilk would make it a good dressing, I imagine.
