Touchdown Chili

Reviewed: Oct. 27, 2011
Outstanding beanless chili! I ALSO USED GINGER ALE INSTEAD OF BEER!! :-) Made this as is but w/1.25 lb ground turkey, so I cut cooking time and all ingredients in half, except for chili powder which I'm glad I used less of... I recommend no more than 2 heaping tablespoons chili powder per pound, very easy to make your own to your liking- a great base is 1 tsp paprika, 2 tsp cumin, 1 tsp cayenne pepper, 1 tsp oregano, 2 tsp garlic powder per 1 lb meat... Anywho! I did not drain green chiles and glad I didn't :-) Served this topped w/sour cream, colby-jack & chedder cheese, over macaroni & cheese w/a side of cornbread! Thanks SO much for this recipe!

Honey Mustard Stuffed Chicken Breasts

Reviewed: Oct. 14, 2011
Very good recipe as is (even without my favorite herbs & spices!) I like to use TWO slices of HAM, w/cheese rolled inside ham. Many white cheeses will work in this dish, my preference is any italian cheese blend but I've used colby-jack w/great tasting results too. Added half a chopped onion before baking because the onion really complements the sugar in the honey. If you fear too strong of a mustard flavor or don't have enough mustard, then lessen the amount of mustards called for and replace the lessened amount with mayonnaise... Two examples: #1, I did not have spicy brown so I used 1/4 cup mayo to replace the spicy brown - chicken came out great. #2, I did not have enough mustards so I used slightly more than 1/8th cup of each mustard with slightly less then 1/2 cup of mayo to make up for the loss of mustard

Classic Pub Style Nachos

Reviewed: Dec. 2, 2011
I left out the olive oil since I used prepared salsa, which made chips soggy so I will only be using salsa for dipping or topping after baking chips! I modified this by adding orange bell pepper and using a shredded mexican cheese blend, green onions and only a few tablespoons of parsley. Thanks for a simple yet great tasting meatless nacho recipe!

Pesto Chicken

Reviewed: Jan. 4, 2012
Must rub pesto into chicken! Lacking the prosciutto & only having boneless skinless chicken tenders, I wrapped & substituted solely ham slices w/some tender strips & solely hard salami slices for the rest; I liked ham better. Can't wait to try this w/prosciutto, thank you for sharing this fairly quick, easy recipe! 5 stars w/pesto rub & 1 slice of provolone cheese (many white Italian cheese would go well with this dish)!

Cheese Stuffed Turkey Meat Loaf

Reviewed: Aug. 8, 2011
A quick & easy but flavorful mess of love! I did not have cheddar cheese though, so I used an Italian six cheese blend and it still came out great! Will be making this again with cheddar cheese as I think it would go better with the typical meatloaf topping of ketchup/BBQ sauce/both. Only things I changed where adding a whole tablespoon of adobo seasoning as well as basil with garlic breadcrumbs because I am a garlicaholic. I was also able to serve 5 so thank you for this nice spin on meatloaf recipe!

Crab Bisque

Reviewed: Oct. 17, 2011
I used a can of condensed cream of celery soup and end result came out great! Glad I only used 8 oz of crab meat because I do not eat crab meat often and felt as though the crab flavor was hiding the tomato and celery flavors so I plan to use even less crab meat next time with the same amount of everything else. FYI for milk, 15 ounces = 1.8 cups. Also, before making soup I sauteed a handful of chopped red bell pepper, carrots and green onions. Thank you for a quick & tasty, versatile keeper!

Tender Italian Baked Chicken

Reviewed: Sep. 22, 2011
I was wondering if the final product would live up to the recipe's juicy title and it exceeded my expectations! Very helpful reviews. I made this according to the original recipe, plus a couple pinches of my favorite herbs and spices; I would also use less mayo & cheese, 1/2 cup of each should suffice because I threw away almost a 1/4 cup of each! Also, I tried one chicken breast in italian dressing- more flavor but I'd rather marinate it first; the mayo chicken was more tender.

Orange-Glazed Chicken Wings

Reviewed: Aug. 4, 2011
Quick and easy but blander than I expected... since I marinated over 24 hours in a freezer bag of 2 cups OJ, 3/4 soy sauce and 3/4 Worchestershire sauce with 1 large tsp of garlic powder... used 3 lbs. of chicken breasts, pounded thin, baked as instructed and even though chicken was tender and juicy, it was too bland for my liking. I will be sure to add much more garlic powder and at least a couple spices next time. (maybe crushed red pepper flakes per another user's review?) I spread hickory & brown sugar bbq sauce on chicken and it made for a slightly more flavorful dish. Making extra sauce for rice might be better with a cup or two of brown sugar...

Perfect Baked Potato

I used this recipe baking an Idaho potato at 375*F for 90 minutes and I liked it better baked at 375*F than I do baked it at 300*F.

PHILLY Pesto Pasta

Reviewed: Oct. 25, 2011
I didn't have cream cheese spread so I used a soft brick of Neufchâtel cheese (1/3 less fat than cream cheese ;) Ditched the mushrooms & spooned Neufchâtel cheese by the tsp into medium flaming skillet but it started popping as well as turning brown so I tried a dash of olive oil but no help there. I spooned the Neufchâtel cheese in a bowl and microwaved it for 30 seconds, then mashed it with a fork; I repeated this microwaving mashing 2 more times, could have done good with 3 or 4 more tho. I immediately mixed Easy Pesto from allrecipes to my cheese, mixed with my hot pasta and cold tomatoes and it was good! Not fun reheating so I must try this w/cream cheese spread...

Tuna Noodle Supreme

Reviewed: Oct. 17, 2011
Made recipe as is and wasn't creamy enough for me, next time I'll add spinach for more moisture, and a little more mayo or sour cream, and 1/4 cup heavy cream or maybe 1/2 cup of milk... just ideas. Also added 2 stalks of celery. For pasta, I used cooked egg noodles (after making tuna casseroles that have called for egg noodles before, I can't be led astray! :-P) but I cannot wait to try this recipe with cooked rice! Also, I topped this off with shredded colby-jack cheese last 10 mins of baking. Thanks for such a good hot tuna recipe!

Spinach Beef Bake

Reviewed: Aug. 27, 2011
Made as instructed but added cheese last 10 mins of baking, didn't use mushrooms and used fresh, chopped spinach. ALSO! I took a chance against many other reviews and used uncooked rice but added 1/2 cup of water and to my surprise, the rice came out GREAT along with everything else, not dry at all!

I like more than a teaspoon when serving 6 so I tripled the amount of spices and almost doubled the amount of dressing. This came out very tasty, thank you!

Crab Bisque

4 stars after I added almost half cup more of milk. Only other thing I changed was substituting condensed cream of celery soup in place of condensed cream of mushroom soup, with a flavorful end result, thank you!

Spicy Beanless Chili

Reviewed: Dec. 5, 2011
2nd time making- Substituted ginger ale for water because it's tasty & I didn't have brown sugar and I added cinnamon, YUM! 1st time making- Didn't use tomato juice, the amount of tomato sauce plus water was more than enough liquid for my liking. It looks like too much water at first but as long as we simmer this uncovered, it evaporates just enough. Tasty chili, thank you for sharing!

Didn't have pine nuts so I halved and toasted almonds on skillet, covered for 10 mins on med-low flame. I do think more than 6 can be served with this recipe as is :-) I put some of this in mayo & it was so good! I also added this pesto to Allrecipe's Philly Pesto Pasta!!

Simply Divine Meat Loaf with Spinach

Reviewed: Oct. 17, 2011
So moist at first that we didn't like it much but upon finishing dinner, I wrapped up leftovers and meatloaf looked better and tasted much better after sitting uncovered for some minutes. Next time I will either uncover halfway through the hour of cooking or let meatloaf sit for at least 10 mins before serving to dry it out a little more. Thanks so much for the recipe, can be very versatile- I added my favorite herbs & spices and also added one half cup of mozzarella cheese to top off meatloaf last 10 mins of baking! Yummm!

Honey Pineapple Chicken

Reviewed: Oct. 6, 2012
I took a chance & baked this dish with large chicken breasts (unflattened) in this sauce but followed all other directions as is, baked at 375 F for 1 hour - juicy, tasty and easy! Must cover baking dish. I can't wait to to marinade my chicken next time - not for too long though, the acidity from the pineapple tenderizes chicken fast!
