Chicken Scarpariello

This was very good. I used chicken broth seasoned with herbs and lemon instead of the water/bouillon. Served over angel hair pasta. Super easy, super quick. This is a keeper.

Famous Pork Chops

Very good. I used garlic & herb topper crackers and skipped the salt. I only used 1/4 cup of butter. During the last few minutes I turned on the broiler to get some brown on them.

Peanut Butter and Pumpkin Dog Treats

Peanut Butter and Banana Dog Biscuits

These are so easy to make & my dog loved them. They only had green bananas at the grocery store so I used 1 jar of baby food bananas as a substitute and they came out just fine. I also used crunchy peanut butter. I didn't roll and cut them, just rolled up little balls, then squished them with my thumb.

Baked Teriyaki Chicken

I followed the recipe as written and it was fantastic. I used drumsticks and thighs. My only suggestion is to start them skin down so the last 1/2 hour the skin gets crispy. My 7 year old son is a teriyaki freak and he loved this!!

Pesto Cheesy Chicken Rolls

This was so good, and so easy! I brushed the tops of my rolls with additional pesto. The last 15 minutes I threw some zucchini in the pan to roast. I couldn't believe how moist my chicken was. I'm not a big chicken fan, but will definitely make this again.

Old Fashioned Potato Salad

I've never been able to make potato salad, but with this recipe, I was FINALLY successful. I like that it has not so much mayo. I cut the potatoes before I cooked them and used dill pickle relish instead of sweet. I also soaked my cut onions in cold water while the potatoes cooled, just to take the edge off them.

Slow Cooked Corned Beef for Sandwiches

This was my first attempt at corned beef. Mine didn't come with the spice packets and it still came out amazing. I made the most amazing corned beef & swiss sandwiches with my panini press. I used the leftovers to make corned beef hash for Easter and everyone LOVED it.

Red Bean Salad with Feta and Peppers

I used two cans of beans and forgot the red pepper and it was still very good. My garlic clove was super potent so next time I think I'll use garlic powder instead. Very yummy and healthful. I also used the tomato basil feta as suggested.

Quinoa Side Dish

This was my first quinoa experience. I used roasted garlic chicken broth because I'm not a veggie broth fan. I had a shallot so I substituted for the onion. I sauteed the garlic and onion when I was toasting the quinoa. Forgot to add the thyme and it was just fine. My 6 year old loved it, despite saying it looked like fish eyes and frogs eggs!! I thought it was very good and will definately make this recipe again.

Champagne Shrimp and Pasta

YUMMY. I used a can of diced tomatoes (slightly drained) instead of fresh. I also used Maine shrimp. They are very small so I only cooked them for a second. This is a great dish...I love it.

Awesome Baked Sea Scallops

Awesome is right! I'm from Maine too, but I used some super huge Russian sea scallops (dry) and they were fantastic. I used Panko crumbs for extra crisp-ness To save a dish I melted the butter right in a pyrex baker and tossed the scallops right in the pan. The only addition I made was a little lemon pepper seasoning in the bread crumbs. This is definately a keeper.

This is so easy, fast and yummy. I use 1 box banana and one box french vanilla pudding. With skim milk and low fat cool whip, it's a fairly low fat dessert!

Broccoli Cheese Soup V

I gave this 4 stars, just because I switched it up a bit. After my broccoli cooked, before I added the milk goop, I broke up some of the broccoli with my immersion blender for a smoother texture (I left some chunks). I subbed 20oz of sharp cheddar for the velveeta, and used black pepper,some salt, garlic salt and a few shakes of dry mustard for some zing. This is SO fast and easy, very comforting and makes a ton. I can't wait to have leftovers for lunch today!

Marinated Grilled Shrimp

Yum. This was fantastic. My husband made this (that speaks volumes alone) and followed the recipe exactly. Used Hunts tomato sauce with Basil, Garlic and Oregano. Next time we might try it sauteed with the marinade over pasta.
