Beef Tenderloin With Roasted Shallots

Prepared this for Christmas dinner and was very happy with the outcome. Yummm! However, the 25 minutes cooking time yielded a rare meat, which was perfect for some. As for me, I put in back in the oven for a little longer for medium. The recipe was easy to follow and impressive to serve.

Tasty Collard Greens

These collard greens are the best! I used another reviewer's suggestion and added about 1 tbsp each of sugar and vinegar. Really helped to deliciously round out my "Southern Style Christmas dinner."

Southern Candied Sweet Potatoes

Made this for a big family dinner on Christmas. It got rave reviews! I did add about 2 tbsp of brown sugar. This is definitely on my holiday meal keeper list.
