I added a can of black beans and some fresh squeezed lime to it and we enjoyed it. Will definitely be making it again with those revisions.

Baked Ziti I

Reviewed: Feb. 17, 2014
This was a HUGE recipe that was easy to assemble. Put it together during the day and then baked it that night for dinner. Took half the dish and froze it in an aluminum tray. Pulled it from freezer and baked it for 1 hour at 350 degrees and it was just as good as the first time. Definitely a keeper.

Pumpkin Cookies I

Reviewed: Jan. 29, 2014
Very good cookie. Made it as the recipe stated but substituted dried cranberries for raisins because I didn't have any on hand. Definitely a good recipe to have on hand. Freezing half the batch in cookie balls to save for another date. Kids also enjoyed these cookies.

Green Chile Frittata

Good and quick breakfast for the weekends. Would prefer a little more flavor with either seasonings or maybe adding meat but overall good.

Garlic Croutons

Reviewed: Feb. 14, 2012
I just sprinkled some extra spices the second time I made them as I wanted a bit more italian flavor for caesar salad. Pan toasting and then in the oven seems to be the best prep. I finally like croutons!

Just don't care for the mushy taste of frozen potatoes and cooked in a casserole.

Pan-Seared Tilapia

Reviewed: Sep. 28, 2011
I didn't add the extra butter because I wanted to keep this dish light. Overall great but could use some more seasoning mixed into the flour.

Very good. Would definitely do it again. I had to use red peppers as it was what I had on hand but very good. :)

Peanut Butter Cake II

Reviewed: Jun. 19, 2011
Great cake and frosting. Definitely a rich cake and was a big hit with everyone. The frosting was a little difficult to work with but I probably should have done a little more cream to thin it.

One Bowl Chocolate Cake III

Reviewed: Mar. 9, 2011
This is just the easiest recipe and it is so moist and good. Second time I have made it and I don't feel the need to ever try another chocolate cake recipe. I did do a full cup of cocoa powder the second time and just as good. Now just to find a great chocolate frosting to top it.

Rich Chocolate Frosting

Reviewed: Mar. 9, 2011
It was a good flavor but had a gritty taste of the cocoa powder. It seems as though the powder should have been added in with water or something to take away the grit. I followed the directions exactly so I am not sure what happened. A friend thinks it was because there isn't any crisco in it but not sure that would have helped.

Prime Rib

Reviewed: Dec. 26, 2010
Did it for 7 minutes per pound at 500 degrees. Then turned it off and left it for the 90 minutes. It didn't get cooked well enough so bumped it up to 350 for a few additional minutes. Had a thermometer in it so we could monitor it through the window without opening the door. Was a great recipe and a big hit with all for Christmas dinner. Will be repeating it for sure.

Peanut Butter French Toast

Everyone really enjoyed this. I had a problem with the PB being on the bottom of the dish so maybe I will try heating it as other reviewers suggested. Will definitely be making again. Added sliced bananas on top and everyone loved it!
