Roasted Tomato Salsa I

It was excellent. The second time in desperation I used regular canned diced tomatoes and it was just as good. I drained them first.

Spiced Sweet Roasted Red Pepper Hummus

I roast my red peppers at 450 for 30 min, turning once and peeling the skins off. I triple this recipe for a typical dry 1 pound bag of garbanzo beans. After soaking and first boil I change the water and retain that water to add back into the mix if it's a little dry. A couple of tablespoons of olive oil help to make it smooth. Love it.

Herb-Crusted Walleye

Nice texture and wonderful flavor. I used Ritz crackers since they were on hand. I also would consider the Parmesean as a "required" item. There is something about it when combined with the other ingredients that makes this special.
