French Leek Pie

I found this recipe after a trip to Alsace, where they serve their famous "tartes flambées". This is very close in taste if you sautée the vegetables in bacon instead of butter. I used 3 slices of chopped bacon and the result was heavenly. I think it would be a bit lacking in taste without the bacon... A bit of ham might work too but then butter would be required.

Apple Pumpkin Muffins

Excellent!!! I halved the recipe and added 1/2 cup chopped walnuts and feel that something would have been missing without the nuts. Very moist.

Hot and Sweet Dipping Sauce

Excellent! Definitely add 1 tbsp corn starch at the end or sauce is too watery.

This is excellent and versatile. I made twice in 1 week, didn't have any mushrooms the first time and found the recipe even better with the mushrooms. As good re-heated.

Excellent. I doubled the chicken and think this was a good decision. I chopped the lemongrass and found it fine although next time (there WILL be a next time) I will leave whole and remove at the end. I used a small cherry pepper instead of the crushed pepper and this was pefect. Did all the rest exactly per recipe.

Apple, Beet and Avocado Salad

I halved the quantity of dressing and found there was plenty for 3 beets. Marinated the sliced beets in all the vinaigrette and just ate the salad 2 days later so this definitely keeps. Used powdered mustard in lieu of prepared mustard. Forgot the onions on the salad, but I served this with sauteed chicken livers with garlic so I guess the garlic compensated for the onion, which I didn't even notice was missing until I just re-read the recipe! Will definitely re-do, and definitely again with the chicken livers. Delicious!

Rosemary Shortbread Cookies

Excellent. I kept the dough in the fridge for 2 hours and made heaping tsp balls and then flattened them. Very delicious, I am foregoing all the other cookie recipes I had lined up and am baking dozens of these!

Papaya Bruschetta

Excellent; I used half the sugar and drained before serving and it was perfect. I halved the recipe and still had plenty for 8 people, unless this were a whole meal I think the portions are a bit off. Would be great with mango too instead of the papaya.

Rhubarb Cooler

I made this to mix with Perrier sparkling water and found it too sweet. Would be more refreshing with 1 1/2 cup sugar or maybe even less - will try again though!

White Chocolate and Cranberry Cookies

These were excellent just per recipe, I made them once using less sugar and second time using sugar per recipe and both were just as good. I then tried a twist because I had other stuff on hand, using semi-sweet dark chocolate chips in lieu of the white, 2 tbsp orange juice in lieu of the brandy, the zest of 1 orange and 1/2 cup candied peels in lieu of the cranberries. Straight out of the oven though, they were a bit of a disappointment, but 12 hours later, OMG these were just amazing. Both versions freeze very well too!

Big Charlie's Gumbo

Excellent. I prepared HALF A recipe using 2 1/2 cups chicken stock in lieu of the 4 cups water, and 1/3 cup tomato sauce and 1 cup halved cherry tomatoes in lieu of the 8 oz canned tomatoes (which I didn't have on hand), browned the meat (3/4 lb cubed beef) in the roux and prepped the veggies as indicated, placed everything in a slow cooker for 5 1/2 hours. When ready to eat, added the shrimp and cooked on high until ready. I did not use sausage but if using, would have browned and added with the shrimp at the last minute and would have increased chicken broth by 1 cup at the beginning. I added a chopped mildly hot red pepper when grilling the veggies and omitted the hot sauce at the end. This is definitely a crockpot keeper! I will use more flour next time though as my sauce was rather liquid (although I had already reduced the quantity of liquids). It was definitely a soup/stew thing, not a "serve over rice"!

Cauliflower Cheese Pie

I think my cawliflower was not chopped enough (I left medium-sized flowerets); this tasted like undercooked dry veggies ... Couldn't find/taste the "custard". Hubby didn't like much either.
