I wasn't able to make it to the party, but WOW, what a FANTASTIC recipe!! Even as a proud member of RTA (Recipe Tweakers Anon), I can't find a single thing to change in this one. Wonderful!

Sweet Vanilla Cupcakes

Reviewed: Mar. 12, 2011
I really enjoyed these. They didn't rise quite as high as I was hoping, but I was baking them in an unfamiliar oven, so I don't want to deduct for that. The taste was excellent. Thanks for sharing!

Raspberry Banana Bread

Reviewed: Mar. 12, 2011
I tried this with strawberries. Otherwise followed the recipe. It wasn't nearly as good as it sounds. I gave it four stars because I changed the recipe. I'd like to try it with raspberries and re-rate it.

Sunday Morning Lemon Poppy Seed Pancakes

Reviewed: Mar. 12, 2011
I enjoyed these, but even after I upped the amount of lemon in them, I could just barely taste the lemon. I will be trying them again, but with MUCH more lemon than called for.

George Washington's Birthday Cherry Cake

Reviewed: Mar. 12, 2011
Not a big hit in this house. Kind of dry. The cherries all sank to the bottom (the top when turned out of the pan). It was okay, but most of it was wasted. My son wouldn't even try it and my husband didn't like it. I truly wanted to like it, but I just didn't.

Excellent! Moist, dense, incredibly rich!! My husband and I couldn't keep out of them. My poor son (whom I made them for) hardly got any!!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Reviewed: Mar. 12, 2011
Very good. I couldn't taste the beans at all, even while it was warm. I did have to use some milk chocolate chips, as I ran out of semi-sweet. Overall, it was surprisingly good. I only gave it four stars because it wasn't very chocolately for me.

Easy Valentine Sandwich Cookies

Reviewed: Dec. 28, 2010
First, let me say my review is based on the dough, only. My son and I made the dough to use for cut-out sugar cookies. That being said, this is THE BEST recipe I have EVER used. I attempt sugar cookies at Christmas every year, and this year, I found success! I made very few changes. I used the full amount of vanilla plus a full tsp of almond extract. I have used the dough both chilled and unchilled, and it is easier to roll if chilled first. Still, I only chilled it about 45 minutes, and it never went back into the fridge after that, but was still a dream to work with. I used powdered sugar to roll it out, and greased my cookie sheets. Exactly 6 minutes worked perfectly in my oven. This recipe is so good that my son and I are making them again today!

Sopapilla Cheesecake

Reviewed: Dec. 13, 2010
Definitely a keeper! Very simple to make. I let the cream cheese get nice and softened (sitting out) and then whipped it up with my stand mixer. Absolutely no problems spreading it out, and had plenty to cover the entire bottom. I didn't roll out the crescent rolls (pure laziness), but just kind of pressed them into the bottom, and it worked great. I used 1/2 the amount of butter on top (again, just what was convenient for me), and it's perfect. Next time, I'll probably cut down a little on the sugar on top. The sugar in the filling is PERFECT! This is wonderful and there probably won't be any left to take anywhere!

Amazingly Good Eggnog

Reviewed: Dec. 8, 2010
This took forever to make, but was incredible! I had to make a few substitutions, but nothing that should really change the flavor. I can't find light cream, so I used 2 cups of heavy cream and 2 cups of 1/2 & 1/2. I thought I had whole cloves, but in the middle of measuring ingredients (at 10 pm), found out I only had ground. So I Googled how much to use and I think we ended up with about 1/2 tsp of ground cloves (we errored on the side of caution). I left out the vanilla (which was a total accident brought on by being too tired), and served the alcohol on the side because there were children drinking it. All in all, it would be worth making again, but only for a special gathering/get together. It was too much work to make just for the heck of it!

Apple Cake IV

Reviewed: Nov. 15, 2010
This was good, but not fantastic. I cubed the apples instead of slicing. I did enjoy the apple taste, but I halved the cinnamon (my husband doesn't like cinnamon), and it was still pretty over powering. If I make this again, I'll cut the cinnamon even more.

Everything Cookies I

Reviewed: Oct. 26, 2010
These cookies are wonderful! The only thing lacking is the directions. Here's how I made them: Cream the butter. Cream sugars in. Add egg and mix well. Add oil and vanilla and mix well. Add cream of tartar, baking soda and salt. Mix well. Add flour, one cup at a time, mixing well after each. (Up to the point, I used a hand mixer.) Mix in oats, then cereal and chocolate chips, by hand. I never time anything, so I can't say how long I've baked them, but they are a tender, crispy...wonderful cookie!

Egg Free Cranberry Pumpkin Cookies

Reviewed: Oct. 7, 2010
I've been making these cookies for years, and they're always a hit! The first time I made them, I followed the recipe exactly and they were great. Now, I use all real butter instead of the shortening and they are AWESOME!! Today, I'm portioning out the dough into a bowl and adding different things. Mini choc chips, dried cherries, I may try some nuts. They're always moist and satisfying. For those getting a "dry, floury" cookie, don't cut down on your flour. Just bake them for less time! They really don't take very long at all.

Fluffy Pancakes

Wonderful!! I happened to have buttermilk on hand, so used that instead of soured milk. Will definitely be making these again! No need to buy the box mix when these are better, cheaper and healthier!

Poppy Seed Lemon Loaves

Reviewed: Sep. 26, 2010
Good, moist muffins (I didn't have the right size loaf pans), but not nearly enough lemon flavor, even after I added lemon extract. I did have to sub sour cream for the yogurt. Maybe next time I'll try lemon yogurt.
