Slow Cooker Pulled Pork

Reviewed: Apr. 4, 2015
Extremely easy. I added a 1/2 sliced onion. The flavor was very good but the meat was dry. I used a tenderloin so next time I'll use a cheaper cut of pork. Husband liked it so it's worth making again.

Diane's Colcannon

Reviewed: Mar. 15, 2015
As stated, it was wonderful and made a big hit. I cooked the bacon in an electric skillet then poured off most of the bacon fat. Then I cooked the cabbage and onion in the same pan - scraping off all of the bacon bits in the pan. The flavor of the cabbage was wonderful. I brought it to a pot luck St. Patrick's Day party and I brought home an empty dish. Will definitely make it again.

Apple Strudel Muffins

Reviewed: Nov. 8, 2014
I chunky cut the apples, added 1 tsp of cinnamon and 1/2 cup raisins to the batter. It came out excellent. The other reviews were of great help because I think it would have been rather bland without the additional ingredients.

I reduced the amount of red pepper flakes and black pepper to 1 tsp. of each. It was excellent and made a bit hit.

Best Carrot Cake Ever

Reviewed: Oct. 27, 2013
This was a MAJOR YUM!. But I did make one change. Instead of using 1 cup of oil, I used the drained pineapple juice and oil to equal 1 cup. It was almost equal parts. I had 2 nine inch pans so I also made 6 large cup cakes. Next time I'll make 3 thinner 9 inch layers.

Banana Banana Bread

Reviewed: Aug. 31, 2010
This recipe was excellent. I took the other reviews advise and added cinnamon and nutmeg. I also added 1 cup of raisins - YUM!. I made them in small cupcake size - 350 degrees around 20 minutes.

Spanish Cod

This was great. I chopped a whole tomato and used green olives/pimental. Lots of juice to drizzle. Will definitely make it again.

Cod with Italian Crumb Topping

Reviewed: Aug. 20, 2010
This was excellent! I also used the mayo instead of egg whites. I had some leftover spaghetti sauce so I poured a little over the top after it was baked.- YUMMY!
