Amazing Coconut Pie

I have tried this recipe twice now and was convinced that I was doing something wrong. Now that I've seen other reviews, it appears I am not and this is just the way it turns out. Both times my pie was way too eggy. Shame, too, because it bakes up beautifully. I'm going to try it with the suggested substitutions and see if that helps. My co-worker, who I had taste test it, says I should try it with no eggs and see what happens. Definitely will be playing around with this some b/c, on paper, it sounds amazing.

Sunday Morning Lemon Poppy Seed Pancakes

I enjoyed these, but I did make some changes. I'm on South Beach so I used whole wheat flour, smart balance, and Splenda. The first time I made them I found that they didn't have enough lemon flavor for me, so I started adding a teaspoon of lemon extract. PERFECT!!! Also, this time around I didn't realize I was out of eggs until I was in the middle of making the recipe, so I substituted a little bit of no-sugar-added applesauce (I just put in what I thought looked like the equivalent to 1 egg, LOL) and it was fine like that. I will say that I have left out the vinegar everytime, too...almost forgot that. I like the recipe and have made it 3 times so far. Thanks!!!

Crazy Chicken Marinade Grilled Chicken

Absolutely fantastic!!! I did cut the Cumin down to 1/2 teaspoon just b/c I'm not a big fan of Cumin and I used lime juice instead of juicing the pitiful looking limes available at my local grocer, but everything else was followed to the letter. I disagree w/ those who thought it was too lime heavy or too chili heavy...I thought it was a perfect balance as did everybody else in my family. It had just the right amount of spice (I wouldn't serve a lime and chili based dish to the kiddos, anyway, folks) and the chicken was very moist. DEFINITELY a keeper deserving of much better reviews than some that have been received. Thanks so much for the recipe!!!

Famous Chicken Adobo

I made this for dinner last night and everybody LOVED it. I did make a few changes to make it South Beach Diet friendly (I used EVOO instead of vegetable oil and used boneless skinless chicken breasts) and it was still fantastic. We had it served over brown rice w/ a ride of sugar snap peas. YUM!!!

Supreme Strawberry Topping

I modified this to make it Southbeach friendly. Basically all you had to do was replace the sugar w/ Splenda (or another SB approved sugar substitute). I used just a little under 1/3 cup of Splenda and I topped the rest of the 1/3 cup w/ some Xylitol. REALLY YUMMY!!!

Parmesan and Basil Chicken Salad

Absolutely delicious!!! I didn't have fresh basil so I used the basil seasoning I had on hand. I think it would be much better w/ the fresh basil, but it was still good. Served it up on some multi-grain bread w/ lettuce. Yummo!!!
