Spinach and Bean Casserole

Oh wow, this is scrumptious and hearty. I read other reviews and made minor changes: 14.5 oz can of tomatoes instead of the larger one, used half the salt, and added a clove of pressed garlic and a bit of cayenne pepper. I had whole fennel seeds on hand so I did my best to chop them a bit with a knife. it turned out awesome. I think I'm going to explode from eating too much of this! :)

Wild Rice Soup I

Yummy! I followed the advice of another reviewer and cut the butter in half, and replaced half of the half-n-half with milk. I realized too late I had no celery, so I used celery seed instead. Added a bit of garlic powder, a little extra rosemary, and I served it with a handful of shredded mozzarella in the bowl. I would definitely make this again!!

I must have done something wrong?? I followed the directions exactly but I really don't think they turned out very good. The crust is mushy and gross. My Mom's recipe is much better than this. I'm disappointed :(

Lentil Chili

I cannot attest to the claim that the leftovers are even better the next day, because there won't be any leftovers :) Yowza, this is yummy! This would be good with or without meat, I had one large chicken breast I needed to do something with so I cooked that, chopped it up, and put it in. It was delicious!

Mushroom Wild Rice Bake

I was in the mood for sweet rather than savory tonight, plus I wanted to "veganize" this, so I made substitutions like crazy. The recipe is awesome either way. Here's what I did: Used vegetable broth instead of water and boullion, brown rice instead of white, apple butter instead of regular butter, and added some finely chopped carrots when the second round of rice was added. With the mushrooms and apple butter at the last step, I also added three small apples, roughly chopped, and 1/2 c. craisins before putting it in the oven. It was absolutely delicious :)

Baked Rice and Vegetables in Broth

I thought this was fantastic... I made this pretty much as-is with a couple minor substitutions (I only had green bell peppers and no red on hand, for example) I had no trouble with the rice not cooking, though I did add an extra half cup or so of brown rice to the mix. Really delicious flavor!

Way too delicious. I don't dare make them again because I can't control myself!!! :) I doubled the crust recipe and didn't quite double the filling, and used a slightly bigger pan. Seriously delicious.

Maple Cookies

I altered the recipe a little the 2nd time I made these, with even better results than the original: I substituted some of the butter with shortening (1/3 c butter 2/3 c shortening) to prevent too much flattening / spreading. Instead of vanilla I used maple extract (I think I'll try doubling the map,e ext next time), I added 1/4 tsp nutmeg to the dry ingredients and chilled the very sticky dough to make it easier to roll into balls. I also drizzled maple frosting over the cooled cookies (2 c powder sugar, 2 Tbsp butter, 2 Tbsp milk, 1 tsp maple ext.) - went easy on the icing so it wasn't too overpowering. I think this is one of my favorite cookies!! :)

Easy Tater Tot Hot Dish

This is an easy dish that's easy to customize! I mostly stuck to the instructions as my father doesn't eat anything with a lot of "stuff" in it but I did add several tablespoons of queso, and used cream of mushroom instead of cream of chicken, and frozen hash browns instead of tater tots (working with what I had on hand).
