Maine Wild Blueberry Salsa

I made this as written except I bought the smallest haberno I could find and used the whole thing. This was like a party in my mouth and everyone loved, even those who do not like blueberries. I used NJ blueberries and they were very sweet!!

Tuna Salad Muffins

If you want 12 you need to use a cupcake pan and not a muffin pan. Muffin pans yield 6. Made as stated except that I use reduce fat sour cream instead of yogurt. They are dense but I like that in a muffin but it does need something extra (maybe more salt or grating cheese). Just keep in mind you need 3 bowls for this recipe. If you don't mind the clean-up then this is a pretty good recipe, although not my favorite on this site.

Tuna Patties

I made these with Arnolds herb stuffing so the stuffing flavoring was not overpowering. I guess a stove top stuffing would make the flavor overpowering. My first patch stuck and fell apart on the pan but when I switched to my griddle and added a sprinkle of bread crumb to each patty they held together. My husband said he would eat them again if I made them which is always a plus. Overall a good way to use some extra cans of tuna because the recipe is easy but not my favorite recipe from this site.

Garlic Crab Artichoke Dip

Since I did not have the garlic and mushroom soup mix I used onion and mushroom. This mix maybe too overpowering for the crab. The color was a little off so I added some breadcrumb to the top but ultimately the dip was delicious. My family loved the dip and it was easy to make with mostly cupboard items except for the canned crab. I used sharp cheddar cheese b/c that was all I had in the house. For anyone reading this review and does not have the soup mix, use half of the onion mushroom mix to start and then adjust to taste. I think you will be pleased.

Granny's Brownies

I have made these brownies before and love them!! The only thing I change is the temperature. I cook them at 200 degrees for the first hour and then 350 until done. They never burn or dry out and stay moist. The cooking time is longer but it yields a really moist brownie.

Spicy Mango Salsa

This recipe got rave review but I changed it slightly from the original recipe. I decrease the amout of garlic to 1/4 tsp and the chile peppers to 1/4 tsp (about 1/2 of pepper). The original amount of garlic was overpowering and I was making this for a large group so I did not want to make it spicy. It got rave reviews at the party I brought it to.

Hawaiian Chicken Salad

The ingredients in this recipe worked well together but the quantity of cream cheese needed to be halved. Canned chicken probably is high in sodium content so adding salt when you use fresh chicken is necessity. I like the taste of paprika in chicken salad so IU added 2tsp of it. After adding that people raved about the salad. So it is good but just adjust to taste.

Apple Bundt Cake

This was the first time I made this cake and it was good. I usually do not change anything the first time I make something off this site but I did. I added extra apples and glad I did - the apples tasted great but the cake part was dry. I will bake at 325 as posted by another next time

Poor Man's Shepherd's Pie

This was great for a quick meal. I made a low-fat version using ground turkey and low-fat cream of mushroom soup. I used white onions instead of green onions and added canned mushrooms. I also double the sauces for extra flavor. It was served with orzo and fresh cucumbers. The trick with this recipe is layering the flavor, I added each ingredient stirred and cooked and added the soup last.

Sweet Potato Balls

Homestyle Turkey, the Michigander Way

This was a great recipe but instead of using 4 cups of water I used 2 cups of wine and 2 cups of water. It was my first time making a Thanksgiving Turkey and it was fantastic. I had a 10lb bird and I would recommend using less liquid though for the smaller ones.
