Tuna Cheesies

These were really good. I roasted red peppers on the grill And then added a bunch of spinach with the tomato on top with the other half of the muffin to make a sandwich. Definitely yummy.

Three Cheese Baked Pasta

Very good dish and easier to make than lasagna. I used my own homemade pasta sauce on this but the sour cream is the secret ingredient, it changes the flavor. I thought I'd have plenty of leftovers but the entire pan was gone after I went back to get seconds

Garlic Butter Sauce II

I like the basic idea of this sauce, but it needed a pick up. I was making this for 14 so I added a stick of butter to the oil. Chopped up and added 5 cloves of garlic to the oil. I used angel hair pasta and had chopped broccoli and chopped red peppers I had roasted on the grill. I put the veggies in the colander and then drained the noodles over top. Then I mixed the noodles and veggies while adding the sauce. I also used about a cup of freshly grated parmesan. Finally, what really makes this dish rock is a few dashes of True Lemon (or fresh lemon juice, or lemon pepper) on top of each serving. That's now a must.

Aloha Chicken Burgers

I used ground turkey patties because my family doesn't like to eat chicken breasts in a sandwich. Very tasty and everyone agreed they would eat them again. Grill the pineapple too and if you want an extra treat put the pineapple in a bowl with its juice and brown sugar before placing it on the grill, then put it on the sandwich.

Quick Chicken Peanut Mole with Cilantro Rice

The mole was pretty good and I'd rate about 4 starts. I don't know if I'd make it again, though it's possible. The rice was more like 2 starts. No one at our table really liked it. I will say, mixing the mole and rice in however you're using the mole tastes better than alone. We used the recipe for mole enchiladas.

Disappearing Marshmallow Brownies

VERY GOOD! Everybody loved these. Next time I'm thinking of using this same recipe but using peanut butter chips and see how that turns out. This is now a dessert staple for our family. Very chewy and excellent flavor.

Wisconsin Five-Cheese Bake

My family loves this recipe. I do a couple of things different though. First, I add about 1-2 tablespoons of diced garlic to the sour cream/cheese mixture. I also add about 1/2 of cottage cheese to that mixture as well. The last thing I do is add a box of chopped spinach with the noodles. An absolutely tasty meal.

Fluffy Pancakes

These are the best homemade pancake ever and quite possibly the best pancake ever. The flavor in these is a bit more complex than the traditional sugar-flour flavor. Highly recommended with peanut butter and maple syrup.

Cottage Meatloaf

Grandmother's Buttermilk Cornbread

Awesome recipe. Very nice texture and flavor. Perfect amount of sweetness without being overboard. I put a brown sugar glaze on top after I pulled it out of the oven and that made this recipe even better. I didn't use buttermilk, but used sour skim milk instead.

Jay's Signature Pizza Crust

I used this recipe to make calzones. The crust has a very nice flavor and was almost perfect for crisp and chewiness. Will definitely continue to use this for my homemade pizzas.

Delicious Ham and Potato Soup

Very good. Excellent flavor and nice consistency. I used frozen potatoes (the square shape) and it still turned out great. One of my kids, who tends to be a picky eater, exclaimed that it was the best dinner ever.

Peanut Butter and Fudge Swirl Pie

This is extremely tasty, though I could only have a small portion as it was pretty rich, but oh so good. I used low fat cream cheese and lite cool whip with my own oreo crust made with reduced fat oreos. Very good and didn't have to feel as guilty eating it.

Caramel Pecan Delight

I love pecan sandies and cream cheese and caramel, so I thought this was a no-brainer. It was okay for me and almost everyone who ate it. The combination of everything was just a little off for me. I ended up throwing half of it away because no one wanted to finish it. I may try again with some substitutions or changes but this wasn't great for me.

Caramel Popcorn

I love this recipe and it is very quick and easy. I basically put the popcorn in 2 large bowls and then mix and stir them together eventually. I don't do the oven part and it still turns out great.

Key West Chicken

The marinade wasn't as strong as I'd like it but it was still good. I marinated for 1 day and then threw it on the grill. Very juicy and nice, but would like more flavor. Everyone who ate it liked it.
