Butternut Squash Soup

Great soup - I halved the cream cheese, and used lite instead of full-fat. It was still incredibly rich. I also used chicken stock from a can, which was easy and delicious. I'll definitely make this again.

Lemon Poppy Seed Quick Cake

This recipe is extremely easy and fast. Make sure it cools completely in the pan or transferral to a cake plate can be a mess. (my mistake) I also made a little frosting for the top which gave it a delicious and beautiful finish. I'd love to try it making my own yellow cake, but the store brand was just fine.

Heavenly Pink Salad

Half this recipe unless you're serving twenty. Next time I will try adding nuts to create some variation in the texture. It's quite sweet. Hard to have more than a few spoonfuls at a time.

Creamy Italian White Bean Soup

This is a delicious soup. Having to blend the soup is a little time consuming and adds a lot more cleanup, but it's really worth it in taste. I left out the thyme and it was still very flavorful. It goes wonderfully with slightly stale white bread. Almost a meal.

Fig and Date Bread

I only had white flour in the house, so it wasn't as hearty as I had hoped. I also substituted almonds for walnuts. Next time I want to use the whole wheat flour because this was really close to fabulous. Quite easy.

Macadamia Nut White Chip Pumpkin Cookies

This is a great recipe. It's easy and delicious. Make sure not to overcook!! I followed the recipe as to the amounts of white chocolate chips and nuts, but next time I'm going to add less chips and more nuts. It wasn't very balanced. Overall, these cookies are fabulous.
