Swedish Pancakes

Tastes like our favorite thin restaurant pancakes! We did not separate the eggs, just beat them together. Cooked over medium heat in butter & topped with blueberries!

Crustless Spinach Quiche

Easy! I used broccoli (which I sautéed with the onion & a shallot) instead of spinach & cheddar cheese. Added 2 eggs & threw in an 8x8 pan. This is a great quiche template.

Delicious Broccoli Cranberry Salad

Great -- needed one without bacon. Still lots of flavor. Like many, used sunflower seeds as garnish rather than nuts. The quick blanching really is a good tip to reduce any bitterness in the broccoli. Thanks!

Seared Tuna with Wasabi-Butter Sauce

My tuna was fishy (yuck) but this sauce saved it with its richness and acid. Might be a little much for a fresh rawer cut, but we had to cook ours pretty well through.

Carrot Cake III

Used recipe as-is, plus just a little ginger paste and cardamom for flavor in the batter. Added lemon and orange zest to frosting. Didn't feel this warranted a whole new recipe on here, but the little bits of spice added nice complexity to a wonderfully textured and moist cake. Thanks for sharing recipe!

Fast and Friendly Meatballs

SUPER friendly kid recipe. Fun to make with lots of kids, good for party activity, especially if you use funny Italian accents while you are making the meatballs. I only had ground beef and one package of ground turkey so I mixed them -- definitely fattier but the kids loved it with ketchup. Natch. Have toothpicks on hand so kids (or adults!) can serve themselves off a big platter.

Tomato Enchilada Bake

I thought, as many others here, that this was a good launching point for some more complexly flavored enchiladas. In the filling, I added black beans, frozen corn from my garden, 1-2 tsp. cumin, 3-4 tsp. chili powder, and another couple handfuls of shredded cheddar cheese. For the sauce, I used 1/2 jar of hot green chile sauce (El Pinto) and 1/2 jar of homemade salsa. I spread a little of this sauce on the bottom of the pans before I put the enchiladas in. Baked them covered for 35 mins at 400, then 10 mins more uncovered at 350. Sprinkled with cilantro to make them taste fresher!

Steamed Mussels with Fennel, Tomatoes, Ouzo, and Cream

We couldn't finish the mussels we made in one night (we had steaks with them!) so we saved them in the fridge and re-heated them the next day with some additional cream. Still delicious....

Hawaiian Chicken Kabobs

I used fresh pineapple. These were so good that at my birthday luau last year they disappeared so fast I nearly missed out on trying them! The last one that my boyfriend had saved for me I got one bite of and then it got drug off by an ill-behaved dog. The one bite I had was very tasty though! Be sure to get rid of fatty pieces on chicken.

Ultimate Twice Baked Potatoes

Right, so it would be difficult to make these taste bad, what with the bacon, butter, creams and cheeses. They were great for lunch the next few days, but it might have been nice to try and make them taste good without all the fatty fat fat.
