Buckeye Balls I

These are delicious, and I think very easy. I froze the balls before dipping them (they are extremely soft when rolling them) - and actually prefer to eat them frozen. I added some sprinkles to make them more visually appealing for the holidays! Delicious, and I know they will not last long in my house!!!

Beef Wellington

Made this tonight for my boyfriends birthday. We both loved it!! I made the individual filets, since there are only two of us eating. Despite the amount of work involved, it was totally worth it! I did omit the pate, and added some port wine and shallots to the mushroom/onion mixture. Will make again!

Wine and Dijon Marinated Pork Loin

I thought this was absolutely delicious. It will probably be better the next time I make it - I was short a bit of lemon juice and had no yogurt, so the next time I make it I'm sure it will be that much better. But regardless, I will for sure be making this again!

Spinach and Cheese Stuffed Pasta Shells

This was quite tasty I think! I did add an onion - which I sauteed with the garlic, spinach and basil before mixing it with the cheese. Very easy!

Delicious! Super easy...I added extra garlic and onions (because I think you can never have enough). Also made delicious leftovers for lunch the next day. Will for sure make this again!

Chocolate Chip Pumpkin Bread

Very good - it makes a lot of batter though - next time I think i'll cut it in half (since it's just me and my boyfriend eating!)...delicious straight out of the oven! From other reviews, I did use 2 C. white sugar, and 1 C. brown sugar -otherwise followed the recipe exactly.

Chocolate Chip Banana Bread II

I made this tonight after reading all of the reviews. And after reading several reviews I also changed a few things - I used butter instead of shortening, did 1 cup white, 1 cup brown sugar and added some cinnamon. I also set the timer for 50 min, and then checked it every 5 to make sure I wasn't over cooking it. This banana bread is absolutely delicious. It's moist...and overall absolutely wonderful - and very easy!! I am bringing it to a party tomorrow and can guarantee it will not make it more than a few minutes! Will for sure make this again as soon as I have very ripe bananas!

Chicken Tikka Masala

This recipe is AMAZING! I actually like making this for myself more than most restaurants I've been to. After reading many of the review, I omitted all the salt, and just added some while cooking to taste. I also double the tomato sauce and cream because I love just the sauce over rice! This recipe is great to adjust how spicy you want it - I love spice, so I add some cayenne to the sauce to make it more spicy...I also add some extra cumin and paprika to the sauce since I doubled it. Delicious, have made it many times since discovering it - a favorite of my boyfriends and several friends, I get asked to make it a lot! I make it with basamiti rice, and naan. YUM!
