Rice Pudding II

My grandma used to make rice pudding all the time, and this recipe tastes just like hers did. It was great, although the baking time takes longer than 30 minutes. About an hour and 1/2 was how long I cooked it. I used this recipe with left over rice, and it was perfect. The kids had never had rice pudding before. They loved it.

Almond Chicken Casserole II

This dish really turned out good. I have to agree with the other comments, DO NOT USE 4 CUPS OF RICE. I used 2 cups of uncooked rice, and I STILL had 2 cups of cooked rice left over. It wasn't a disaster, though. I used the idea that others had, and made a rice pudding from a recipe I found on this site. In the casserole, I cut up the chicken and cooked it in a skillet with curry seaoning. Afterwards, I sauted the onions in the same skillet with the leftover juice. I left out the celery. I also toasted the almonds. It was delicious.

Double Layer Pumpkin Pie

I made this for Thanksgiving, and everyone loved it. No one could believe it was a "no bake" recipe. I shopped at the last minute, and the store was out of instant vanilla pudding mix. I used what my sister had at home, 1 box of regular instant and 1 box of suger free instant - 2 different brands. One box was a little small, so I didn't have enough according to the recipe, but I made it anyway. I compensated by adding a little more suger and cream cheese. They were counting on pumpkin pie, and they were not disappointed. It still turned out great, so I think it's hard to mess this one up. I didn't notice any aftertaste from the pudding mix like other reviews noted. Next time I'm going to experiment with a regular pie crust. The graham crackers with the pumpkin was the only thing I wasn't too crazy about, but I STILL had 2 pieces!! A++

Cheese Corn Spoon Bread

This was a super hit at the in-laws' Thanksgiving, my husband's favorite. I easily threw it together that morning, and I should've made more! I love cheese, so I added lots into the mixture, not just on top. I also put a litte Cavendar's seasoning in the mix... DELICIOUS!! Can't wait to impress people with this recipe again.

Aunt Millie's Broccoli Casserole

After reading all the rave reviews, I chose to cook this for Thanksgiving at the in-laws. Ii was a hit (except with my broccoli hating husband). I easily threw it together that morning, and everyone LOVED it. An important note: I followed the suggestions people gave in their reviews, which was a big help. I left out the salt and pepper, and used Ritz crackers on top. I also used frozen broccoli to save time, and EXTRA cheese. I'm cooking this every year!!
