Turkey Mercedes
I've made this turkey almost every Thanksgiving since I heard about it a few years ago. The only thing I change is to use just two heads of garlic and only stuff one head in the holes. I tried it with three the first time, and although I enjoyed the roasted garlic flavor, some of my guests didn't. For those who don't care for the citrusy gravy it produces, you can do what I do and make a plain turkey gravy to serve on the side using the reserved neck and giblets.

African Chicken Stew
This recipe was not bad, and definitely inspired me. However, with the spices as listed, it's too bland for my taste. I added more of everything, plus a little ginger. I also added a carrot and a can of chopped tomatoes, and substituted vegetable broth for the water, adding a little extra as per reader recommendations. I used standard, processed PB since I can't get the natural variety. It still seemed to lack something, though. I think a cilantro garnish would make a big difference, but I didn't have any. I'll see how it tastes after it's sat for a while.

Armenian Lentils
I had my doubts about this dish up until the final taste test before serving it, but the lemon and scallions really work wonders and complete the dish nicely. I added a carrot cooked with the onions and put some chicken bouillon cubes in the water instead of adding salt. And instead of plain yogurt, I whipped up a garlic-mint-cucumber yogurt sauce (like tzatziki)
