Alfredo Sauce

My husband is a huge fan of Olive Garden's alfredo sauce. This recipe is really close and I've made it many times. I use half and half instead of cream and add some regular powdered parmesian to thicken it up. I also double the garlic and throw it in with the melting butter. To save time, I use freeze-dried parsley. I double the recipe for extra sauce to spoon over chicken and broccoli. So nummy!

Caroline's Chocolate Fudge Frosting

This is probably the best chocolate frosting I have made (I've made a lot!) Very close in consistency to the store-bought stuff, but much better taste and much healthier. I did add in more powdered sugar, about a couple teaspoons of cocoa powder and a bit less milk than the recipe called for. My picky and honest husband said is was great! This is my new go-to frosting.

Sunday Brunch Casserole

I baked my bacon in the oven in my large stone ware pan at 450 degrees and then poured the prepared mix right into the pan(after crumbling the bacon). I subbed asparagus for the onion (my husband hates them). I also just added a splash of half and half instead of the milk (it was too watery last time). I also added garlic and onion powder. Very good and made the house smell wonderful.

Janet's Rich Banana Bread

I mashed my bananas and used half whole wheat flour. I doubled the recipe (lots of bananas to use up!) and made a loaf plus chocolate chip muffins. I have tried many banana bread recipes but this was by far the best. Wonderful banana taste and rich texture. So good the muffins didn't even need the chocolate chips. This is my new go-to recipe.

Black Bean Brownies

I made these with high expectations... the results we so-so. They looked great and had a great fudgy texture but I just couldn't get past the beans. The batter tasted like beans, they smelled like beans while they where baking and the end result had an unmistakable bean-y taste. I probably won't make these again. To be fair I am pregnant so my sense of smell/taste is probably much sharper than usual. Someone else might not taste the beans at all.

Hash Brown Egg Bake

I scaled this downt to 4 servings and omitted the bacon. I also added some garlic salt, onion powder, and pepper. It smelled really good when it was cooking and was pretty tasty. I will probably make this again.

Monster Cookies II

I halved the recipe. I also ground half the oats into a flour in the blender for a smoother dough. I added in chocolate chips, m&m's, peanut butter chips, and peanuts. They turned out pretty tasty.

Quinoa and Black Bean Chili

Healthy and delicious! I too cooked my quinoa in chicken broth. I omitted the bell peppers and jalapenos and added a can of green chilies. I also just tossed in a can of corn. I added a bit more garlic and cilantro. This was my first time cooking with quinoa and I was pleasantly surprised. Rinsing them did prove diffucult, as they are so tiny they go through any strainer I had on hand. I just rinsed them in a measuring cup and strained the water through my hand. I will definitely make this again!

Oven Scrambled Eggs

I made these this morning, I scaled it down to two servings for my two little boys and myself. I melted the butter right in the glass baking dish in the microwave. I stirred them a few times. These turned out very good, definitely a step up from regular scrambled eggs. I will make these again!

Tater Tot Bake

I added a can of french cut green beans. I also mixed everything with the meat mix on the bottom so the tots wouldn't get soggy. Very yummy, and satisfying on a cold day!

Oatmeal Pancakes II

I have tried many pancake recipes and this is my new favorite! I doubled the recipe and ground up my oats in the blender into a fine flour and used whole wheat flour. I didn't have buttermilk so I used milk and vinegar. These turned out absolutely delicious. I will use the leftovers to make my little boys pb and j pancake sandwhiches. Easy to make, and so much healthier than store bought bread.

Norwegian Waffles

I followed the recipe to a 'T'. The batter was very thin and kept overflowing out of the sides of my waffle maker. Even though I melted the shortening completely it hardened back up in the batter into hard little balls. My family wasn't impressed with the taste. Won't make these again.

Gourmet Sweet Potato Classic

I made this to take to my MIL's for Thanksgiving. I baked the sweet potatoes and cut down on the sugar. They were still very sweet, a little too sweet for my tastes, but my husband raved about them(he rarely raves about anything) and everyone really liked them.

Dead Man Meatloaf

I made this following the directions almost to a T. I added a little ketchup to the mix and some extra seasoning. It was fun and the kids liked it. Though it took over an hour to cook and you have to be really careful to keep the thickness the same or certain parts will be overdone while others parts are underdone. If I made this again I would halve the recipe as it was WAY too much for our family of four. We have been eating the leftovers all week and there is still a bunch left.

Omelet in a Mug

I loved the idea of this, as we eat a LOT of eggs and it is so quick and easy. I made this for my son and he said it was terrible. I took a couple bites and they were pretty bad. To be fair I omitted the green pepper and ham cause I didn't have them on hand. The egg (and cheese) by itself really can't compare to eggs scrambled on a skillet.

Chocolate Truffle Cookies

The cookies are unbelievable! I would honestly say these are the best cookies I have EVER had. I am a total chocaholic though. The cookies were very moist, rich, with just the right amount of sweetness.

Simple Slow Cooker Meatloaf

Banana Oatmeal Bread

I used butter (about 6 tbs), walnuts instead of raisins, and I ground up the oats into a flour in a blender before using them, and used whole wheat instead of all purpose flour. My bread turned out really, really delicious. I have tried many banana bread recipes but this is my new favorite.

Yummy Peanut Butter Bread

My family and I love this bread! I do increase the peanut butter to about 1/2 a cup, the yeast to two teaspoons, and I use two cups whole wheat flour and one cup bread flour. I have made this bread many times and it usually turns out very moist and delicious. Makes awesome toast and pb and j's.
