Delicious Ham and Potato Soup

Wow!! Really good. I didn't change anything except for using more ham (oops). One thing I would recommend is not to add salt. Maybe because I used more ham and used salted butter it got salty after sitting for a bit, not so salty it wasn't delicious, just saltier than it needed to be.. The whole family loved it and it was great with some crusty bread. Will definitely be making this one again!

Salsa Chicken

So easy and tasty!! The spice wimp in the family had a hard time with it until she scraped the sauce off and dredged the chicken in sour cream. Very tasty, I will try it in the slow cooker as others have recommended. Oh, I used Costco Organic Salsa.

Sweet Hot Mustard Chicken Thighs

Followed the recipe as written except omitted the cayenne and halved the chipotle (one of the kids is sensitive to heat) and added one onion per other reviewers suggestions. It was moist and delicious, definitely a keeper! Definitely add an onion, the kids devoured them! Yum!

Key Lime Pie VII

My 9YO daughter had a presentation to give on Florida and one of the extra credit points is to bring in a food for the place they are presenting. I found this recipe and I must say, it was amazing!!!! I made a pie before bringing one to the school and brought it to work to test on the co-workers, the pie got rave reviews! I followed the recipe exactly. The most vague part was the cooking time, my daughter and I camped out in front of the oven for about 20 minutes waiting for that perfect bake time. If anyone has a problem with this pie it is because they either cooked the pie improperly or they didn't USE REAL KEY LIME juice. A garlic press is so super helpful for this recipe. 20 key limes made the right amount of juice; zest is essential; I used pre-made crust from Keebler, no complaints on that either.

Friendship Soup Mix in a Jar

I put this soup mix together and gave it as Christmas gifts. I have had rave reviews from people who made it. I made it and thought it was a bit salty (I'm a bit sensitive to salt in food) but the rest of the family couldn't get enough of it. The recipe makes ALOT as written, so it is best to give as a gift to a family, not a single or couple. Unles, the single or couple have a bunch of hungry friends. I have a family of four, two of us love soup and had leftovers for a few days but there was still quite a bit left over after 4 days. Well, the pasta turned to mush and I sent about two servings through the garbage disposer. SO, if you plan on making this or giving it, be aware that the pasta does not hold up well. Other than that, awesome soup!!

Pasta Primavera with Italian Turkey Sausage

I love this recipe! It is very tasty and the family loves it. I have made it a few times, as written it is great. Our family preference is less pasta, more veg, only 1/4C oil and a bit less red pepper(we have one spice wimp in the family). Fresh basil is always the best and the freshness of the veggies in the dish is amazing and a refreshing reminder of summer!

Easy Marinated Pork Tenderloin

Made this as written except subbed the honey mustard with 2T of dijon and 1T of honey. It turned out tender and flavorful, I would definitely recommend this to people who don't want to overwhelm the meat with heavy marinade. Also, the kids (girls 11&9) loved it. I did simple green beans and some sprouted rice/quinoa blend as sides.

Middle Eastern Turkey Dogs

I made this recipe exactly as stated except I bought a package of 1.25lb ground turkey and did patties rather than dogs. Next time I make this (very soon) I am going add a bit more spice to make up for the amount of turkey. My girls 9 & 11 scarfed it down! My hubby is out of town and when he gets home I am going to make this again! Served with sliced red onion, tzatziki, feta and whole wheat pita. Forgot to halve the cherry tomatoes I had or would have thrown those in too! Delish! Thanks!

Pineapple and Basil Sorbet

I had a ton of basil to use and came across this recipe. I told my kids about it and they were so excited for us to make it. It was easy to make and I had for about 10 popsicles. They are super tasty and the flavor is unexpected and amazing! The reason I din't give the recipe 5 stars is the stringy pulp from the pineapple. I can get about halfway through a popsicle before I feel like I am going to cough up a hairball! Maybe I needed to process it longer... If anyone has a suggestion, I would love to hear it, they are delicious.

Spinach Basil Pesto

My kids (9&11), hubby and I loved it. I did buy pine nuts from the bulk section in the grocery store and toasted them myself. The pine nuts are not too expensive when you buy bulk because this recipe doesn't call for much.

Andy's Spicy Green Chile Pork

OK, this was a huge hit for our family!! A few changes, though... I know. Added cumin (about 4 teaspoons), do it to taste. Added garlic powder, just a little. Used Safeway Medium Green Salsa (24oz). Used a 2.5lb pork tenderloin. After the workday (about 9 hours) in the crockpot on low, I scraped off what bits of cilantro and salsa remained on the pork into the juice. Transferred the pork and shredded. Took the juice to a blender and poured over the shredded pork. Served in warm tortillas with cheese. So yummy!!! Try this recipe, it is so easy and is totally versatile to your taste!! THANKS ANDY!!!!

Spicy Garlic Salmon

Kids and hubby liked it so, five stars from us. I didn't really measure and just used cayenne pepper for the spice. I did use more garlic and "not" fresh lemon juice, because that was what I had on hand. I also overcooked the fish by three minutes, 15 minutes is the max on this recipe.

Anniversary Chicken I

I have made this dish three times and every time it is a hit with the family!!! I read several reviews regarding the saltiness of the chicken, my guess is using the wrong teriyaki sauce. Although it is not an "authentic" teriyaki sauce, I always use Yoshida sauce (available at Costco in the big jug) and nothing I have cooked with this sauce has ever been too salty. BTW, I followed directions loosely without changing ingredients, except the bacon bits, I used fresh. Oh, and just squirt the ranch right from the bottle onto the chicken, why wash another spoon?!
