Brown Rice and Black Bean Casserole

Wow! Delicious keeper! I omited the chicken to make it a side dish with tequila lime bbq shrimp & substituted mozzarella cheese to use up what I had on hand. Family friend raved and he even asked for the recipe so he could make it for his kids. Try some cilantro sprinkled on top to add some color and deepen the flavor. Thanks LYSLW! I'll be making this for years to come!

Daddy Mack's Oysters

Yummmmmmm! This turned out great! Only modification I had to make was to sum minced onion for the shallot. Sriracha is a must, don't leave it out. As other reviewer noted, this makes way more than needed for 12 oysters. I baked Costco frozen halibut filets for dinner last night and topped with pats of the left over butter in the last 2 minutes of baking (11 min. total at 400 degrees). Another hit in my house! Thanks, Chef Dad, for this tasty recipe.

Oia Greek Salad

This was a big hit at a potluck I recently brought it too. I Used the Absolutely Fabulous Greek Dressing recipe from this site as others suggested and it turned out wonderfully. I combined the tomatoes, cucs, capers and olives and kept the dressing, onions & cheese separate until right before serving. My only suggestion would be to cut back the capers to 2 oz and rinse them well. 4 oz was just too many capers. I'd use about an ounce less feta next time too. Over all great recipe! Gourmet Mushroom Risotto

Awesome risotto! Used one portobello and a handful of white mushrooms and it was perfect! Didn't need all the broth. It did take longer to finish than twenty minutes. Next time I'll try a larger pan. I'm sure this will speed up the absorption. But wow, ths is yummy and my family raved about it. Also a nice lunch leftover. It's really worth the work, give it a try!

Amish White Bread

Wow! This bread is amazing! I made it exactly as written except I halved the recipe and used my Kitchenaid mixer. Thanks for the mixer instructions submitted by other reviewers. My second rise took a little over an hour. 30 minuted in the oven, and it came out perfect! So moist and fluffy and light. The sweetness complimented the savory bean stew I served it with. Didn't even need butter, it is so good. It's comes out sweet as written, but not cake sweet. I will try other's suggestions and make it with less sugar to use as a sandwich bread. Thanks for the recipe, Peg, it is a real winner. And gave me some confidence to experiment further with bread making. LOVE!

Gingered Carrot Soup

This is a delicious soup! But be sure you like ginger, because it definitely packs a good ginger punch! I went with grating the ginger and used the amount called for. Also I used 3 cups stock and half and half. I think it would be just as good with low fat milk. I pureed it with my immersion blender, seasoned it with some salt, and presto! Delicious, spicy, flavorful soup! Today for lunch, I topped it with a dollop of fat free greek yogurt. YUM!

Mexican Taco Quiche

I found this recipe when looking for something to do with a pie crust and left-over taco meat. I sent it today with my husband to work and he and his co-workers devoured it. He said it was "a big hit". I followed other reviewers advise and scaled down the ingredients. I used 3 eggs, 1 cup milk, kept the green pepper the same at 1/2 c., used 1/4 large onion, about 1.5 c. cooked taco meat, 2 handfuls shredded cheddar (didn't have mex cheese blend on hand), and 1/2 tomato chopped (instead of salsa which I also did not have). I baked it in a deep 9" pie plate in my gas oven for 50 minutes. It sure looked pretty and smelled great coming out of the oven. If I wasn't trying to loose my extra holiday weight, I would have had a slice.

Green Chili Casserole

I love this recipe and have been making it for over a year now. I put flour tortillas in the layers. They absorb some of the moisture and make for a more filling meal. I find it a little sloppy without the tortillas. I just read through other reviews and I'm going to have to try it with bacon. Sounds delish!
