Pretty good, but not the best I've had. I like the cake to be a bit fluffier. Perhaps if I had included the coconut, it would have been better. It did taste better the next day.

Jim's Macaroni Salad

Took this to a bbq and it was a hit. I substituted red pepper for the green and added red onion instead of white. Also, I used rotini pasta in place of the macaroni. I think it could have used a bit more kick, I might add a tablespoon of mustard next time. Also, added chopped ham and chopped cheddar instead of American cheese. It's great!

Old Bay® Catfish Fry

Liked by my kids, especially oldest (6), but a bit dry for my younger ones (3). I have made these smaller before, like nuggets and have had to use more oil to cook, these met with better success.

Barb's Chocolate Cake

This tastes just like the cake from the local fine bakery. It is chocolately without being overly sweet and it is moist and rich with a refined flavour. I'd highly recommend it. My very reserved 80 year old mother in law, who never comments on any of my food, complimented me on this cake.

Beef Stew IV

This definitely needs doctoring up, as one reviewer put it. Definitely use 3 c. beef broth instead of water, with one cup of red wine. Also, add more bay leaves and I added more Worcestershire. I should have added more garlic and added more beef or veggies. It needs another spice, like thyme or something to spice it up a bit, otherwise it's too bland.

Classic Cabbage Rolls

This was delicious. It is far better than the other cabbage roll recipes I have tried at this site. I didn't have garlic, so I added garlic powder and I also added dried minced onion instead of the real onion (my son hates onions) and it was still delicious.

Mini Meatloaves

Delicious. I had to have two. My picky eater son - three years old ate 1 and a half and that's a lot for him. The older boy - six - ate two of them, then didn't like the topping anymore, so ate another half with the topping cut off.

Slow Cooker Green Beans, Ham and Potatoes

I thought this was OK, but my husband loved it. I didn't like tearing the ham off the bone, it was quite fatty and wasn't easy to get off the bone. I might try this again with ham steaks or something.

Chocolate Rocky Road Cookies

i didn't have chocolate chips in the house, so I used six squares of semi-sweet chocolate (1/2 with the butter, and 1/2 in the batter) and I couldn't keep these cookies on the table. They disappeared like wildfire. I will make these again!!!

Cheese Garlic Biscuits II

I think this recipe is great! And so do my children - they beg for it. I did follow recommendations to add some more cheese, so I added about 1/2 cup more. I also cut down a little on the butter in the recipe as mine seems to bubble out of it onto the baking pan. I added pureed garlic to the batter rather than doing the spread on the top.

Egg and Sausage Casserole

Increased cooking time as recommended by other reviewers to 40 to 45 minutes in my oven. I added broccoli to make it a meal in one. Kids loved it. Might have to add more sausage next time.
