Baked Coconut Shrimp

Absolutely amazing! I have gone ahead and used the entire egg (not just egg whites) a few times and it worked just fine. Just hate having that extra yoke waiting to be used and then forgotten! Also, I found that I ended up using more coconut that it states, perhaps that is just because I like it to be "well coated." Serving it with orange marmalade may sound strange, but really does compliment it well. To make it easy, I use a sil pat instead of just coating a baking sheet, makes clean up that much easier. Have made this recipe over and over. LOVE LOVE LOVE it - and so do my in-laws now :)

Amazingly Easy Irish Soda Bread

Had to find a recipe for Irish Soda Bread. Read multiple reviews and decided to go with this one. Followed it JUST AS WRITTEN. When cooking, I "basted" it every 15 minutes which also enabled me to keep track of right amount of time when cooking it. Took just about 40 min in my oven. LOVE not having to knead the bread or letting it take time to rise. Made it for hubby's potluck on St. Patrick's Day and got rave reviews. People wanted the recipe :) As the bread let the house with him that day, it looked and smell sooo good that I had another loaf going in no time at all for the family! It is delicious. On second loaf actually let the dough "set" 30 minutes before putting into the oven to see if it would enable the baking powder/soda to go to work sooner and get more rise - there was absolutely no difference from the loaf that didn't have 30 minutes of sitting time, so SAVE YOURSELF THE TIME and just plop it into the oven. Tastes great fresh and toasted also

Watermelon Cooler Slushy

Wonderful, but I did cut back a bit on the lime. We have a son who doesn't really like fruit, but LOVED htis drink! I just smiled as he gulped it down.

Thai Chicken

Always anxious to try a new Thai Chicken recipe, but I need to try no more. We loved this ... the kids not so much, but it was a meal that I chose for my hubby and I ... and we LOVED it :)

Amish Breakfast Casserole

WONDERFUL meal ... measured everything out the night before (cooked bacon/onion, grated cheese, defrosted hash brown shreds) so that it was a quick assembly in the morning. Went a bit lighter on the cheese, and it was still plenty cheesy. Definitely a recipe worth keeping

Pumpkin Bread

Even the picky eaters in the house liked this recipe. Cut sugar by a cup and tasted just fine. Made into 24 mini loaves and cooked them for 22 min. Freeze great too!

Cherry Crumble

This was excellent and several told me to "keep this recipe." I doubled the recipe to fill a 9 x 13 pan. I added about 1/2 - 1 tsp almond extract to the cherry filling. I added about 2 tbl more of butter to the topping. It was sooooo good! Topped with whipped cream

Honey Corn Bread

Wonderful tasting. I did go ahead and put the freezer corn into my food processor as I wasn't sure how the family would feel about "chunks" of corn in their bread. Worked out great. Also, this is definitely a SWEET corn bread ... probably more accurately called a honey corn muffin or cake. A bit of maple syrup and you really do feel like you are eating dessert with your dinner. Very tasty and everyone enjoyed it, but really didn't pair well with chili ... need more of a traditional "corn" bread flavor I think.

Flatlander Chili

This definitely was spicy but was enjoyed. Our oldest son, who does NOT like spice .. I told him he had to at least taste it. Well, despite the heat, he ate 2 bowl of it, but just enjoyed it along with FOUR glasses of water to cut the heat. Rather funny because usually he just won't touch hot stuf. I did add an extra can of home canned tomatoes. Instead of tomato sauce, I used V8 juice (one can)
