This recipe was great, exactly what I was looking for, simple and delicious. Having made it a few times now, I changed a few things to my liking: First I love a really lemony taste so I added the juice of 3 lemons, added the zest of 2 of the lemons to the dry ingredients and upped the flour to 1/3 cup to make up for the extra liquid.
The crust is simply perfect just as it is, buttery and melts in your mouth. Also, just for a change instead of squares, I made this recipe in a tart pan and cut in into thin triangles.
Truly a great lemon bar and proves my theory that most times the recipes with simplest of ingredients are absolutely the best!
