West Indian Curried Chicken

I've made this recipe 3 times since I found it a few weeks ago. I usually halve it since it is just for me and I use either legs or legs and thighs depending on what is on sale. I love that it is so easy to make, but I do make a few minor alterations to the recipe. For one thing, I like my chicken to be "falling off the bone" done, so I brown it by itself first on both sides before I add the onions and garlic. Another change is that I don't add so much salt. I add about a teaspoon and a half of salt. I just sprinkle it on top and then I add the water right over it. Then I cover it and let it simmer. So far I've been very pleased with the results.

Banana Pancakes I

I had some ripe bananas that I didn't want to go to waste so I followed this recipe except I added a 1/4 tsp of pumpkin pie spice, and I used a little butter instead of oil to grease the pan. Delicious!

Garlic Shrimp Scampi

I made a high-fiber, alcohol-free version by using Oat Bran instead of bread crumbs, and white vinegar diluted in water instead of white wine (I added two teaspoons white vinegar to one cup of water, then took out what I needed). I also kept the garlic in by using a garlic press. Finally, I added a little Old Bay seasoning and a little Italian seasoning. This was my first time cooking shrimp and I'm very happy with the way it came out.

Rice Pudding

I left out the raisins and added cinnamon (a half teaspoon, which was a little too much). Anyhow, I think those of you that think it is too sweet must be talking about the version with the added raisins, because without the raisins it is just right.

Tortilla Espanola

I halved the recipe because I am not a huge fan of eggs, plus I'm single. But I wanted to try a Spanish recipe because I'm learning the language and wanted to connect to the culture. To my surprise, it came out great, and the taste of eggs didn't overpower me. I did make a few adjustments....I used red potatoes instead (which I believe cook faster), and I used Old Bay seasoning) (my favorite in place of the smoked paprika, salt, and pepper. I used a small white onion instead of a sweet one, and I used dill instead of parsley. Finally, I made sure that the bottom of the eggs were brown before putting it in the oven for about 6 minutes. Excelente!
