Sour Cream Pear Pie

I made this on 3/14 to celebrate PIE day. ;) I added a tsp of almond extract to the egg/sour cream mixture, as a couple other reviewers suggested. DELISH!! My youngest son doesn't like pie, but he tried a piece and LOVED it!!

Slow-Cooker Corned Beef and Cabbage

Made this for St Pattys Day, and my 17 year old son commented during dinner that he decided this is his favorite meal! (I followed the recipe almost exactly; I made it a little easier by using baby carrots (about 20) and a bag of shredded cabbage, and I used about 6 red potatoes, and cut them into bite-size pieces.)

Taco Slaw

Delish!! We use a half pkg of coleslaw mix in place of the cabbage and carrots in the recipe, and increase the cilantro to about 1/4 cup, and use 2-3 T bottled lime juice instead of fresh. We make soft-floured burritos by putting the slaw on top of Dee's Roast Pork for Tacos (on this sight) and Green Chili Rice (will have to submit the recipe). Love it!

Fajita Marinade I

Delish!!! I added chopped cilantro to the marinade, like another reviewer suggested; about 1/2 bunch. The taste and smell of this recipe is sooo good!!

Dee's Roast Pork for Tacos

We love,LOVE this recipe!! We cook the roast in a crock-pot on high for 6 hrs, shred the pork in the crock-pot (shreds easily), and then cook an additional 30 minutes. DELISH!!!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

AWESOME!! I loved it, my teenage boys loved it! I followed the recipe exactly (made 15 cupcakes) but I did cut the frosting recipe in half and after frosting the cupcakes generously, I still had a couple spoonfuls left. :) My frosting was runny though, and so I was not able to pipe it onto the cupcakes like the photo. :( Not sure how to amend my frosting to make it thicker for piping. ??? When I make this again, which I definitely will cuz I'm sure my boys will ask me to, I will bake them in cupcake liners, as they were hard to get out of the pan even though I had greased it.

Broiled Parmesan-Lemon Tilapia

Sooo good! I couldn't find Miami-style sazon seasoning (discovered McCormick discontinued it) so we used Old Bay seasoning and it was great! We have had this each week now since trying it because we like it so much and it's not very many Weight-Watcher points.

Mini Pineapple Upside-Down Cakes

Yum! Yum! Yum! I made this to share with a group of ladies for after our tennis match, and they LOVED it! Had many requests for the recipe. I did make a few changes- didn't have enough of the brown sugar, butter mixture so ended up using a cup of each (but would use less butter next time); and I used crushed pineapple, pressed, instead of the sliced pineapple, since my tins were not big enough for the slices and trimming them was not working.
