Cranberry Salad III
The lovely white and red layers of this salad are eye-catching on a Christmas potluck or dinner party buffet table. If you don't have a clear bowl, use a clear Pyrex-type baking dish and supply a "pancake turner" for guests to serve themselves. A thin layer of green Jello or even pistachio pudding before and after the white layer adds an eye-appealing touch. I'm proud to have this one on my Christmas menu. My thanks and appreciation to the person who posted the recipe. I intended to point out that the recipe says to LET THE CREAM CHEESE LAYER, the 2nd layer, SET FOR 10 MINUTES. It does NOT say it takes 10 minutes for the FIRST gelatin layer to set. However, after reading more reviews, I see that other reviewers have already corrected this.

Easy Mexican Casserole
"Easy Mexican Casserole" is a great name for this recipe. It couldn't be much easier to put together. It makes a LOT of servings and looks so bright and pretty in the dish and on the plate. It's also easy to add a side dish that goes with it and a desset to have a complete company or family meal. The degree of spicyness can be adjusted by the type of salsa used. I used medium Great Value (Wal-Mart)brand salsa and thought it was just right. I also used other GV brands to cut down the cost of the ingredients. The only problem I had was that the sour cream had a curdled, cottage cheese-like appearance after the casserole baked; however, I see it looks the same way in the pictures of the same recipe that are posted here. I made this Easy Mexican Casserole for company to have as an alternative to the beef stew that I served at the same meal. Everyone ate some and agreed that the casserole was delicious. Both of my early-teenage grandsons told me they loved it. I've saved the recipe to take to the next potluck dinner at church.
