Black Bean and Corn Salad II

Amazing!! Made this for a BBQ on Labor Day and it was a hit. Excellent flavor... At least the way I made it. I left cilantro out and up the red pepper and garlic. Left the oil and lime ratio the same. I don't like green onion so I sautéed white onion and added the peppers (red and orange). It was very yummy!! Did I mention this was fabulous? Well IT WAS!!!

Byrdhouse Blistered Cherry Tomatoes

This is great if after cooking you smash then add roasted garlic (pasted) and parmesan cheese. Lather it up on some french bread slices and YUMMY!

Bow Ties with Sausage, Tomatoes and Cream

I LOVED this. It was very yummy. I used a 14.5 oz can of diced tomatoes with sweet onion (didn't drain) and tomato sauce with roasted garlic in leau of the garlic, onion, and tomatoes that she used. It was so easy and so good. I also reserved about 1/4 cup of the liquid from the cooked pasta and stirred it in when mixing the pasta and sauce. Added a tad bit of parmesan reggiano... Outcome was success! Husband, 18 month old, and 5 year old all ate it.

Hawaiian Chicken Kabobs

I really enjoyed this recipe. I did sub out rice wine vinegar for the sherry and it tasted great. Follow the suggestions of other reviewers and it turns out great! Thanks for the recipe.

The Best Chicken Fried Steak

I would give the Steak 5 stars and the gravy 2 stars so I settled with 4 since the main dish is the steak. The gravy was just SO greasy as written. It tasted just like shortening. Once I poured over half of it out and started with that as my base adding milk and beef broth, it was great. There is no need for that much grease. On the other hand, I am NOT a fan of chicken fried steak, but this was really good. I had some meat to use up and I will probably go back to this recipe in the future. Thanks again!

Chocolate Chess Pie II

I have been making this exact recipe for years. Here is a great tip my grandmother taught me: First mix the sugar and cocoa together very well first. Second, don't melt your butter completely. That is why some are coming up with runny pies. The butter needs to still have some "chunkyness" to it. Hope this helps! Mine comes out great most of the time, although sometimes it cracks. I ususally bake it between 40 and 45 minutes. And then like others suggested leave it in the oven with temperature off for 10-15 minutes with door cracked. Love this recipe!

Ham with Pineapple

My mom's recipe for years is similar to this minus a few ingredients. Just place ham in crockpot, pour a 16 or 20 oz. can of pineapple rings with juice over top and sprinkle with 1/2 cup of brown sugar. Walk away and let cook for 5-6 hours on low and wow. Not only will your house smell like ham heaven, but it will fall off the bone and break into chunks of yummy deliciousness. :) Enjoy!

Coconut Poke Cake

My mom always makes this for Christmas and Thanksgiving along with other special occasions. It is so good and I never thought it was so easy. The only step I added was to sprinkle a tiny bit of coconut flakes on top of the cake right after it came out the oven before I topped it with the cream of coconut and the sweetened condensed milk. Very Yummy and moist! Thanks for the post.
