My kind of recipe. Relatively simple but delicious. This is my third review and my first with five stars. It is what I consider a terrific foundation recipe, one that can be altered and built upon according to taste. Drawing upon past reviews, I doubled the recipe and increased the chopped onions, perhaps 1/3 cup. I sauteed the onions and two minced cloves of garlic. I, too, parboiled the potatoes to ensure they would be cooked Using food on hand, my topping was 2 cups of crushed corn flakes with 5 crushed saltine crackers. This I mixed with 2 tablespoons of melted margarine and 2 tablespoons of parmesan cheese. Excellent. The crispy topping provides a nice taste and texture contrast to the body of the casserole. And a variety of such toppings are usually on hand. Like others who doubled the recipe, I cooked the casserole for about an hour at 350. Thank you Novella Cook.
