Grandmother's Pound Cake II

Blonde Brownies I

Made these for my boyfriend, they turned out great. I used semi sweet chocolate chunks and mixed them into the batter rather than sprinkling them on top. Don't let these sit in the oven too long, I'd say 25 minutes TOPS is all they need. I lined the bottom of the pan with greased parchment paper, then use the paper to lift them out and set them on the countertop to stop the baking asap as they cooled. Easy and man-approved ;-)

Pizza Meat Loaf

This was very good- I love the pizza flavor it has while still retaining that comfort food meat loafy texture. I'll definitely be making this again. Modifications: I used a Prego Tomato/Basil pasta sauce instead of Ragu. Didn't make too much of a difference. Also, I added some Italian seasoning, as well as some diced pepperoni to the meat. Note about the pepperoni- microwave it first for about 30 seconds, then squeeze out as much of the grease as you can with paper towel so it doesn't make the loaf too greasy when you bake it. But it makes it taste even more like pizza when added ;)

Vanilla-Almond Fruit Tart

Made this for the 4th as a dessert. Everyone said it was very refreshing and yummy. Modifications: I used a French vanilla flavor whipped topping and French vanilla pudding mix. Also, I did need to use more than 50 Nilla wafers to fill the pan (actually just used the whole box), needed more butter as a result, so just keep that in mind. Overall though, well worthwhile :)

Cajun Style Baked Sweet Potato

These were pretty good- I cooked one pan of them a little long, but the other pan came out okay and had a nice spicy punch to them. Next time I'll lessen the cooking time or cut them into bigger pieces.

Southern Sweet Potato Bread with Pecans

This bread is delicious! My only complaint would be that the baking time was longer than the directions said- but that could just be my oven...anyway, I'll definitely be making this again :)

Cake Balls

I actually made these by mistake- I was initially making a marble cake, but the cakes didn't come out of my cake mold pan neatly, so I was left with a bowl of crumbly cake crumbs at first. Then I suddenly remembered this recipe and decided to just run with it! I combined the marble cake with some chocolate frosting, then used chocolate flavored almond bark to dip them in. I bought almond bark from the store and didn't like the taste of it on its own, so I melted it with some Hershey's chocolate chips, mixed it together and then it turned out fine. I had to refrigerate the cake balls I rolled overnight, because on their own, they weren't holding together in the dip. Once chilled though, they held together perfectly, and the bark hardened within minutes. My mom said they were like chocolate truffles. Next time, I'm definitely going to mix up cake mixes and frostings. Thanks for this 'save' for botched normal cakes :)

I made this for a vanilla pound cake I made for my boyfriend. It was pretty good- a little on the sweet side on it's own, but it enhanced the cake just fine.
